Stopped in the first time there for lunch last week. Felt a bit off eating in the old Hadley cafeteria on a particularly slow afternoon. At the time we were the only other diners. Polite waitress saw us to our table. Noticed how modern and plush the dining area was. She gave us the smallish menu that was short on description of the food. We chose the chicken pesto and ham with fig sandwich. The entrees were amazing. The pesto was quite fresh and the sandwich was so flavorful. Great Place to check out while in Hays. Highly recommended.

I cannot emphasize enough how good the food was. I got the marry me chicken pasta and it was just the absolute best food I have ever had. It made my entire day and satisfied my soul! Our server was a delight to talk to ❤️ will ALWAYS make it a point to stop here whenever I am in Hays so I can try everything on their menu!

Amazing experience! Great made-from-scratch food. Everything was delicious. Tanner had his internship here and said it was amazing how much he learned from them and how passionate they are about creating their dishes!
I love tiramisu and this was hands down the best I’ve ever had! And it looked amazing & tasted even better! They need to add a pic of it here!

Amazing experience! My husband and I consider ourselves foodie and this place did not disappoint! He had the parmesan crusted filet with asparagus and I ordered the marry me chicken with the smoked glazed carrots. We also shared an ap of the hot honey artichoke dip! Everything was outstanding. Service was fantastic. We are from out of state and only make the trip to visit family, but we will spread the word about this place!!

The whole place just work!
The food was amazing, unique, and played very professionally.
Highly recommend for a special night or for an above average meal.
They also have this separate room with a couch for like a small gathering, probably 10 people, so perfect for a fun dinner party night with friends!

Verdant bistro is one of the most unique and cozy dining experiences in Hays. Their interior is refined and welcoming, their menu is varied and delicious, and the staff are incredibly friendly and attentive and always do their best to tend to your every need. Colby is an excellent server. And also they are always changing their menus and creating new experiences to enjoy. Also the drinks are fire. Go here.

Lunch on a Friday. I came in around 11:30 am. Austin was my server. Wonderful service. Very knowledgeable and courteous. I started off with a mocktail, which was delicious! The homemade bread came out first, warm and soft. Then the Basil pesto gnocchi and Gochujang chicken sandwich. My goodness!! Dynamite flavor! This place is a hidden gem. If you haven’t tried it, you’re missing out.
