Xi’an Noodles was founded in May of 2016 by Lily Wu, a Chinese immigrant with a dream of bringing the famous “biang biang noodles” of Xi’an (the capital of China’s Shaanxi province) to Seattle. Lily dedicated two full years to learning and perfecting the craft of noodle-making before moving to Seattle, where she made her dream a reality in the form of Xi’an Noodle’s flagship restaurant, located on Pine Street in Seattle, Washington.

Little gem inside the mall. Went in today to try for the first time and was superbly impressed. It’s also woman-owned so I’m extra happy it was good because I will be coming back to support!

Biang noodles are chewy and wide and dumpling feel very much like a mom and pop shop’s. The noodle soup broth was light and delicious. The medium spicy level on the biang noodles was relatively mild for someone who likes spice but was really good.

All orders are done on the self order kiosk and it’s really easy to track your order on screen or just wait for text saying it’s ready. Everything was pretty affordable too which is an extra plus. It’s in a good court area upstairs so plenty of seating around.

Omg the food here is soooo good!! Definitely try the lamb or beef noodles with “no-soup” (it’s not dry despite the name, it’s very juicy and flavorful! Stir it and cover everything in the juice at the bottom!) Noodles are excellent and so are the veggies, sauce, and meat! It’s affordable especially for the good portion size, you don’t see that anymore! Employees were also super nice! There’s a bunch of seating and it’s peaceful to eat there. Located on the second floor of the mall. 100% will be back!

Excellent food, ordering was easy, though done through a screen. Came out quickly and was delicious across the board. Atmosphere is very modern and minimalist, not really my thing but some may appreciate it. I highly recommend trying this spot.

the spicy cumin lamb biang biang noodles are one of the best meals in the whole world to me and I’ve been eating here for nearly a decade but I’m gonna be real i just got done eating these and I’m sitting in Westlake as I write this and the noodles were honestly overdone and soggy they kinda just melted in my mouth which is not what I want when I’m eating a giant piece of boiled dough…. I want the noodle to fight back a little bit in a chill way.. I need some bounce, some texture, some backbone… this did not cut it. Keeping the rating high because I believe in this restaurant and I’ll still keep eating here even if it doesn’t hit right because that’s still a bunch of cumin lamb doused in black vinegar and chili oil with delicious onion and cilantro and at the low price of 14 dollars I simply can’t resist…. But I’ll be doing so with doubt in my heart. Fear of overcooked noodles and slight disappointment. And I’ll be making a point to seek out the other locations since they haven’t done me wrong yet. It hurts to speak critically of this wonderful restaurant but they’ll be alright and I’ll be alright and you’ll be alright too… have a blessed day

Mall food court restaurant that’s not bad. Got the Beef Dry Noodles with Vegetables, and tasted fine. You order through a touchscreen display, so pretty easy to customize your order.

I tried them for the first time and had to get the spicy cumin lamb noodles. Definitely the most impressive dish I have tasted at a kiosk! Loved the subtle spiciness, chewy noodles, and the added garnish. Noodles travelled very well too after 15 minutes on the street car and made great leftovers. Will get them again.

Rode the Link into Westlake Center and ate lunch here before walking downtown Seattle. While the portions were on the light side, the food was delicious and we ordered enough to fuel us for the day. I would definitely eat here again.

The pork burger lacked in both flavour and juice. The burger buns also weren’t as flaky as they should’ve been. The noodles were okay but portions were small. The consistency of the cold noodles weren’t smooth.
