The cocktails were just as impressive: creative, balanced, and beautifully paired with the food. Service was friendly and attentive without ever feeling rushed.
From the atmosphere to the art on the walls, everything about the night felt intentional and full of heart. I’ll definitely be back soon!
All that said, the food was the star here! Everything we ordered was as good or better than the last and it was a phenomenal value getting the three course meal. This isn’t just the best Guatemalan food in the area, it’s some of the best food in general.
If you are anywhere near Stillwater, you are missing out if you’re not regularly visiting Xelas!
The food was absolutely outstanding. Every dish felt thoughtful and unique, showcasing flavors you don’t often find elsewhere. Our servers were wonderful—attentive, friendly, and knowledgeable, taking time to explain each dish and its origins.
The cocktail menu is huge and creative. I tried one served in a large pineapple-shaped glass topped with a salted foam, and it was just as fun to look at as it was delicious to drink.
Overall, this restaurant is a true hidden gem. Incredible food, impeccable service, and an inviting ambiance—I can’t wait to come back and try more of the menu.
The alcoholic drinks were excellent and very different compared to other places serving the same type. Ex: a margarita here isn’t loaded with sugar and premixed. Theirs was very light and refreshing with a decent amount of alcohol. We only had one appetizer which was the guacamole with pork belly and WOW. Delicious.
As for the main entrees, our group ate every single last thing on our plates. The flavor combos were outstanding and we left full, but not to a point of being uncomfortable.
We got 2 orders of the churros which were light and fluffy, and the chocolate cake. The cake was fruity and sweet but just the right amount of chocolate too.
For someone who is from Guatemala, this place felt very special, authentic, and welcoming.

My only note is that the atmosphere could use a little refinement to bring it to level playing with the food, drinks, and service.
