All our meats are smoked with imported Hickory from the Ozark Mountains and Post Oak from Texas. We cook with stick burner offset smokers. (only firewood, no gas, no electricity) The fire needs to be tended by our pit crew constantly throughout the day and night. Regardless of the day, we strive for consistency over quality. Quality is what we hire for… consistency is what we train. Our meat is also chosen with the same level of nerdery as the wood and flavors. We buy only the high quality beef from Painted Hills out of Fossil, OR. We know the owners, sales managers, sales reps, ranchers, where the pack, how they pack, how they feed, etc. They also know what we want and need to supply a consistent product to to our customers.

Visited this Texas inspired BBQ spot on Capitol Hill and was pretty impressed across the board.
Menu was deep enough to make my mouth water, service was great and timely and most importantly my lunch, their Chilli Brisket Mac N Cheese was plentiful and perfectly decadent.
Look forward to getting back their soon to eat my way through their menu!

The peeps here are nice , cook seems like a big introvert. But he makes the food so good. He has me coming back. I just hope he knows I HIGHLY appreciate him and his cooking! He gave me hope again! Thanks man!

I first tried the food truck, now the actual shop. This place full of wonderful people deserves all the hype.Especially because its a BBQ place in Seattle…that IS really goood. In Texas I tried Terry Blacks and that was 3/5. But this place is 5/5!

Megan was awesome! She was very attentive and took care of our every need. Made us feel very at home in their restaurant. The food was very good! I had the half rack of ribs which was more than filling and my friend had the pulled pork sandwich which was delicious! Their homemade pickles were exemplary my friend would go there just to purchase pickles.. LOL my only wish is that they had hush puppies

better than the BBQ we tried in texas (dont tell them)

i recommend the fatty brisket, pulled pork sandwiches, their spicy mac n cheese, and the frito pie.

we come here at least once a month. dogs are allowed in the outdoor area which has heating.

definitely recommend!

The 1/2 pound brisket from here came out in two large pieces, rather than a set of smaller pieces. I think the smaller pieces would’ve been preferable, but it didn’t make too much of a difference.

I was a little mixed on this brisket. When they came out, both pieces felt pretty moist (i ended up getting one lean piece and one fatty piece). Upon holding it up with a fork, I could see that the pieces did a good job of both holding their shape and having a decent flop – though not at the absolute top tier
Appearance-wise, I also noticed that the smoke ring was present.
The bark was pretty inconsistent, however. It was present at some points, but at others it was just completely missing, with nothing to the side at all

When it came to eating, I thought the lean piece felt a bit dry. Due to the lack of fat, there needed to be enough moisture in it, coupled with tenderness, to make up for this – and I just didn’t think that this was there in that piece. Especially towards the end, as it got farther from being sliced, eating it felt more like a chore than something enjoyable.
The fatty piece was better though – due to the increased margin of error from the fat. The fat rendered quite well, and this piece had a lot of flavor throughout.

The meat came with two sides – two slices of bread, pickled red onions, and pickles. This may be weird to say, but I thought my favorite part of the meal were the slices of untoasted white bread. These were surprisingly amazing for being the emblematic blandest thing you can have. The onions and pickles were also great.

I tried a bit of their BBQ sauce, and I really liked it. This was good because it wasn’t just sugary – it had some spice to it as well. Normally, I hate BBQ sauce because it’s just too sweet, but this one I liked.

While my experience here wasn’t top-tier, I would absolutely be back to try the brisket mac & cheese. I’m not sure this place does the greatest meats, but I have a feeling they specialize more on the sides, so this combination is very intriguing to me.

Price-wise, I ended up at around $20 for the meal – which honestly was very solid and not overpriced at all – considering half a pound of brisket

Overall, it’s not the greatest brisket, but it’s good enough that I’d be down to come back. 7.5/10

Pulled pork on macaroni and cheese, YUMMY! Portion was generous enough to split with my husband… although it was so good I probably could have eaten the entire dish! And the best house made Arnold Palmer I’ve ever had, delicious!

Came with the family, it was my first time, I was told that the food was much better last time, this time the meet was dry, not juicy enough to enjoy.

Portions were big enough.

Waitress Forgot cola from the order and later offered to refund the drink.

The overall expedited was Okay !! ***

The best BBQ I have had on the West Coast(disclaimer, that is a really, really low bar to clear).

Amazing Ribs and Mac & Cheese(Mac & Cheese Balls too). Housemade sauces are good too. Would stick to just the fatty brisket. The rest of the menu is alright, but I would just stick to these 3 items. So so so tender and tasty. Must check out in Seattle.
