Wine & Whiskey Bistro is such a great addition to Castle Rock. The atmosphere is welcoming and relaxed, with a really good vibe that makes you want to stay awhile. The wine and whiskey selection is thoughtfully curated, and it’s clear a lot of care went into creating the experience here.
The owners were absolutely awesome, friendly, engaged, and clearly doing all the right things to build something special. You can tell they care about their customers and the community. This is the kind of place you want to support.
Highly recommend stopping in if you’re anywhere nearby. We’ll definitely be back.

What a wonderful way to spend a Sunday. Drinks were phenomenal and food was outstanding. My husband had the oyster shooters in tequila and the clam dinner and I had the rice and shrimp. I normally dont like rice but this was the best rice I have ever had hands down.

We loved the cook/baker and the bartender. They are really trying to make the place successful. Our fondue was excellent and the bread in it was so fresh and yummy. Drinks were delicious. Definitely will be back. The lemoncello dessert cake…..yummmmmm!

We visited the bistro and while the beverages were superb, we found the charcuterie to be mediocre. Having to ask for the actual items offered from the menu felt odd as they were offered and not provided. Service fell short as we were ushered out for a reservation when their website stated “walk-ins welcome” as seating was available. Overall, it was average, will frequent elsewhere.

We went tonight for their soft opening. What a fabulous addition to Castle Rock! It was well worth our 25 minute drive. The menu was well done with a variety. Everything we had was amazing! Their drink varietal was exceptional…all of their juices are fresh squeezed.

We went tonight after the ribbon cutting. Our server Landon was great. Our food was amazing. Robin came out to thank us for coming in and to check how we liked our meals. We just wish she had opened sooner since we are moving and won’t get to eat here as often as we want to.
