First time dining here, sat outside on the patio for an afternoon lunch. Service was top notch (Kat, our server, was very attentive & knowledgeable of the menu items) and the food (I had a chicken sandwich & my husband had a tenderloin) was excellent!! We will recommend & definitely return to try other items!

I wanted to like this restaurant, but left disappointed. The atmosphere and service were great. I have no complaints about that. We were the only ones in there at 5pm on a Saturday night and that just felt weird. The menu is small and doesn’t have a lot of choices, but the food we did choose did taste good. I ended up with the short rib and although it tasted good, it was lackluster. There was no presentation or care. They just threw one piece of meat on the plate. When ordering drinks, it took a long time. Took so long that by the time they were brought to us I forgot we had even ordered them! But, those were pretty tasty. So, overall just disappointed for the price you pay. Expected more.

We went on a Saturday evening. Made a reservation, although once we were there they definitely had more than enough space for us.

Our server Kayla was friendly and attentive. She was patient when we took a while to order.

Drinks were tasty. Bottle of water on the table made refills easy.

The pasta helpings were plentiful. We added chicken to the bucatini. The bucatini became gummy as it cooled down. The pork belly ragu barely had any meat in it, so our server suggested we add a protein. Added steak and got a very generous portion. The pasta was a little cold. Ribs were fall off the bone tender.

It was perfect weather to enjoy the patio.

Great atmosphere good food good prices. Came here for lunch and got the corn fritters which are amazing. For sure recommend to try those. The rock shrimp were perfect. Also got a smash burger which was done perfectly. My husband loved their fries as well. Great stop while on the road since service was fast.

Went for the Valentine’s Day special (booked in advance) and while our server was decent, everything else was subpar.

The lights very bright for 8:00 pm and we could hear basically everyone’s conversation within 20-30 feet. So the atmosphere is a bit lacking.

We were ignored for about 15 minutes after being seated and when we were ready to order, told they were out of items on the set menu. When we did get our food it was bland, unevenly cooked, and uninspired.

Our server did her best to compensate, but we just did our best to enjoy each other’s company, eat our food and leave as soon as possible.

My husband and I went in last night for the Valentine’s Day Special and although they were out of the prime rib, our server Kayla, worked with us on alternatives. I had the salmon special and my husband opted for the filet and he loved it! It was packed, but Kayla did a great job and even gave us some extra chocolate covered strawberries!

We booked a table a full week in advance specifically for the Valentine’s special ($39.99), only to be told upon arrival that they had already run out of prime rib. Running out of the centerpiece of a pre-booked Valentine’s menu is simply poor planning. My wife begrudgingly accepted the ribeye, but by then the evening was already off to a bad start.

After being seated, we were completely ignored for about 10 minutes. From the time we ordered to the time food arrived, the wait exceeded 45 minutes. The waitress was polite, but visibly stressed and overwhelmed—more a symptom of mismanagement than a saving grace.

The food did nothing to justify the wait. I ordered the half chicken, which was dry and forgettable. The cauliflower side was mediocre at best. My wife’s fingerling potatoes were utterly unseasoned. Presentation across the board was sloppy and uninspired, especially for a prix-fixe menu meant to feel special.

They also had the audacity to advertise a “cherry kiss salad,” which amounted to a few sad, dried cherry fragments sprinkled on greens. That borders on misleading. Dessert was a strawberry enrobed chocolate—fine, but that requires zero culinary skill and felt like an afterthought.

For nearly $40 per person on Valentine’s Day, this experience was disorganized, underwhelming, and frankly embarrassing. Poor planning, long waits, mediocre execution, and misleading menu descriptions made this feel more like a cash grab than a special occasion. We won’t be back. Do better.

In a hotel as busy as Hyatt Regency Coralville can be this gem of a restaurant and bar is and goes far and above to stand out. When that first hit of coffee in the morning hits in all the right ways you just know it’s going to be a good day. I tried a little bit of everything breakfast lunch, dinner, and drinks,and the Watermill kitchen and bar did not disappoint. Absolutely worth everything cent spent. 10/10 will go again.
Update: I’ve gone again and still a top tier experience.

Great menu! Service and atmosphere was perfect. Flatbread peach pizza very good. The brussel sprouts looked good were too greasy. Rotini was a good pasta option. Good portion on the rib entree with a good cornbread side. Steak entree was a bit on the small side. Pork bowl was a nice twist on pulled pork. Cobb salad would have been great but over dressed. Dressing on the side would have worked better. Creme brulee, trifle and bread pudding were all good with the bread pudding being the best. Brisket sliders would be better with no cheese.

My out of town guests and I waited over 50 minutes for our appetizer and another 15 for our entrees. Supposedly this was because of a large group in the restaurant, however, since the restaurant is located in the Hyatt, I would think that they would be used to large groups.
Once the food arrived, it was excellent. Comping us and others who waited nearly as long with appetizers isn’t adequate. The Watermill easily could have had 3-5 stars had it not been for the extraordinarily long wait.
