This level of scene-setting is worth mentioning, because for many visitors, a trip to the Walnut Family Bakery is an excursion. Still, plenty of locals from Madison County, as well a folks from neighboring Buncombe County, regularly make the trip for the Thursday and Saturday bake days. For me, the visit was long-awaited—from Los Angeles all the way to Western North Carolina—to see an old friend and former colleague. I’ve had the joy of watching Camille’s career from its early beginnings and through her many achievements, including being named James Beard Rising Star Chef of the Year in 2018, along with numerous other accolades that recognized her talent, creativity, and leadership in culinary arts.
And yet, despite all she’s accomplished, the Walnut Family Bakery may be her most impressive milestone. Camille opened the bakery this September—just a year after the most devastating flood the region had seen in a century. Madison County, and the town of Marshall in particular, were hit hard. What would have been her year of preparation for opening instead became a year of service: Camille did what chefs so often do in crisis. She cooked. She fed neighbors, supported relief efforts, and raised funds the best way she knew how.
Which makes it all the more remarkable that, one year later, the Walnut Family Bakery is open and already beloved. Visitors are greeted with genuine warmth and are almost guaranteed to leave feeling like they’ve made a new friend. Camille radiates energy and hospitality—even after long days of work and very little sleep.
The bakery itself is cozy and inviting. Guests have a full view of the open kitchen and oven, with shelves of breads and pastries on full display. There’s slender bar seating indoors and plenty more room outdoors: cafe-style tables and chairs, along with picnic tables and benches along the hillside, plus blankets for anyone who wants to settle in and stay awhile.
Camille sources many of her ingredients locally. Of the many beautiful pastries offered that day, I was lucky enough to snag a fig-jam croissant squiggle: a perfectly laminated, deeply buttery croissant with a rich jam filling that pulls apart just right. Paired with a fresh cup of coffee and a chilled herbal garden drink (made from herbs grown in the small garden behind the bakery), I honestly can’t remember a pastry—or a setting—I’ve enjoyed more.
For those able to make the trip to the Walnut Family Bakery: count yourself lucky. You’re in for truly spectacular flavors, offered with a kind of care and hospitality that’s increasingly rare. It’s an experience that will stay with you long after you leave.
