We ordered their signature dry noodles and a bowl of California Tonkotsu Ramen.
Dry Noodles:
The noodles were pleasantly chewy with well-balanced seasoning. The chashu had a noticeable grilled aroma, which added great depth. At the end, a small portion of rice is provided so you can mix it with the remaining sauce—delicious and a thoughtful way to avoid wasting any of it.
Ramen (with soup):
The soft-boiled eggs in both bowls were perfectly cooked. The broth was well-balanced, smooth, and easy to drink without feeling too heavy.
Dessert:
We had the Hokkaido milk flavor, with the black part made from bamboo charcoal. The milk flavor was rich but not overly sweet—just the right finish to the meal.
Overall, this is a solid restaurant with good food and service. Definitely worth checking out.
This was our first time here, and the staff were very helpful, explaining the menu and giving recommendations. We started with the Chicken Karaage and Vegan Nuggets (though we later realized we ordered too much; one starter, or even none, would have been enough for two!).
For our mains, we got the Dry Ramen (Mazemen). My husband had the chicken and I chose the vegan option. The vegan bowl actually tasted better thanks to the smoky flavor of the Brussels sprouts, a dash of chili oil, and the creaminess of the miso. They even provide a small bowl of rice as you’re finishing your ramen to mix with the remaining sauce. It was the highlight of the meal! Oi-meshi is Oishii! (Thanks to first few lessons of Duolingo heehee)
A friend recommended this place to us, and I’ll definitely be listening to her suggestions going forward because this one was spot on!
You can scan qr code to see the menu but you cannot order from there. We order deluxe mazemen, spicy miso ramen and chicken karage.
The recommendation on the mazemen is to mix it with vinegar. At the end they will provide small scoop of rice and we can mix it with the remaining of mazemen. The mazemen is the highlighted dish. The noodle is chewy which I really like. It has strong may be anchovy/seaweed.
taste. The miso ramen is so so. I wish the noodle is different. The chicken karage is a twist of Korean fried chicken as it is glazed with regular Korean fried chicken glazed. Overall it was good. I will come back for the mazemen.
The menu was interesting. I ordered the Tokyo dish, and the waiter was very friendly and came over to chat. He asked if I’d ever been to Tokyo. I smiled because my mother and brother are both in Tokyo.
The noodles were very thick and didn’t really blend in with the sauce. It felt like the noodles were just noodles, and the sauce didn’t stick to them.
At the end they brought the small cup
Of rice mixed of the sauce and good for ending .
They serve Mazemen which is a soupless noodle dish though there are plenty of toppings and a sauce at the bottom which all comes together when you mix it. You need to mix all the ingredients to make sure you get everything in each bite. Halfway through they recommend you add the vinegar located on the table. To be honest I like it throughout the dish so I add it earlier on. Towards the end of the bowl they will bring you a small serving of rice to pick up everything left in your bowl.
We ordered the Deluxe and it was so perfectly balanced. The texture and chewiness of the noodles, the savoriness of the sauce and the minced pork, and the added flavors of the toppings made for a mouthwatering experience. We’ve had a similar bowl at one of our favorite restaurants in Tokyo, so to have this place so close to home is so nostalgic. The Mazemen alone deserves five stars!
We also tried the iikagesu and agedashi takoyaki appetizers which were both good as well. In particular, if you like takoyaki, you’ll like this fried version. It’s a different twist on traditional takoyaki.
Service was hospitable, friendly and super efficient. Our food came out quickly. And bc they are in their soft opening phase, everyone took good care to make sure we had everything we needed and asked for feedback. The owner Daniel also came by to ask about our experience.
The space and decor is modern. It seats a decent amount of people but I anticipate long wait times as more and more people discover it. I hope they will be able to manage.
Needless to say, Wadaya will be in regular rotation for us. I know they will be very successful in this space. No one else does this around here. It will be sure to busy. Grand opening is Monday, Sept 1st, Labor Day and I’m sure they will be some wait times. Pack a little patience if so, bc it will be worth it. It’s located in the Ranch 99 Plaza.

DULUXE
This one has a little spice with minced pork, a soft-boiled egg, green onions, garlic, nori, and a rich fish umami flavor that all comes together perfectly. The chashu is extremely tender, and the egg is cooked just right.
KYOTO
The only non-spicy option. The garlic flavor is more noticeable here, and in addition to the fish umami, you can also taste the aroma of white sesame even though it is not listed on the menu.
After finishing the noodles, they serve a small ball of rice. Mixing it with the remaining sauce makes for a perfect finish.
The portions are generous, and both bowls we tried were absolutely delicious.

We waited outside for about 3 parties in front of us. The wait wasn’t long and we got seated within 15 minutes.
Their decor was clean, minimalistic, and modern. The restaurant itself isn’t big, but it was able to fit about 20-30 guests comfortably. Their specialty is mazemen, a Japanese styled dry blend noodle. Having had them in the past I knew what I was getting into. Here are my thoughts on them with my wife:
Takoyaki (Osaka style) – 3 out of 5. It tasted too doughy, they should have manned the flipping grill a little better.
Chicken karaage – 3 out of 5. Their chicken karaage had an unique sauce on it. Chinese sweet teriyaki sauce? It was a little different then your typical chicken karaage that I was expecting.
Mazemen “Deluxe” – 4 out of 5. It tasted decent, but if you have had other blended noodles or mazemen in the past this taste wouldn’t jump out as something unique that you haven’t had. The texture of the noodle is a little bit on the harder side, I personally like that but if you prefer the softer texture this would be something to keep in mind.
Mazemen “Tokyo” – 4 out of 5. Similar to the deluxe version, this version did not have the chashu in the blend.
My conclusion to this restaurant is that if you haven’t had it in the past, sure give it a try and see if it is up in your alley.
If you are someone like me, who have had plenty of blended noodles in the past…let’s just say that this spot is probably not one you’ll go out of your way to get unless you are feeling like having it particularly.
I would come back again if my friends invite me to, but as to me, I’m undecided whether I would. There are just too many competitions around this neighborhood that offer similar food and value.

This restaurant is located in Fremont, California, and the overall atmosphere is really nice. One thing to note upfront is that parking is very hectic. Parking is limited, and there appears to be more demand than available spaces.
We checked in at 1:00 PM and were seated at 1:30 PM, so the wait time was about 30 minutes, which wasn’t too bad. Overall, the staff was friendly and welcoming. One employee had a slightly rough or “hood” way of speaking that felt a bit out of pocket, but he was still nice overall.
As for the food, the appetizer was good but leaned on the salty side. We also ordered ramen, which was good overall, but again, the saltiness stood out across the dishes.
One important issue I would like to bring to the attention of management, leadership, and the owner is regarding the water cups. While the water itself tasted fine, the cup had a very strong and unpleasant smell. It was bad enough that it almost made me feel sick. This is something that should be addressed, as it significantly impacted the dining experience.
