Everything was good except for the Chinese donut, it was abit soggy and not crispy.
We came during grand opening weekend, so the place was packed with a long wait. We had a party of 10, so the wait was about an hour. Even after being seated, it took another 15+ minutes before someone came to take our order. We had to go up to the front to pay the bill and order extra sides since we did not want to wait. They also sold out by 3 PM, so I recommend waiting until the hype dies down before trying this place.
My husband and I switched bowls halfway through, and we both felt that each other’s bowls were lacking. The broth flavors were not very bold overall. He liked the bun bo hue more, while I preferred the hu tieu bo kho.
Bun Bo Hue ($14.95 S | $16.95 L): I did not think there was much meat, and the flavors were muted.
Hu Tieu Bo Kho ($15.95 L): When I read hu tieu, I was expecting the large flat rice noodles, but they gave thin rice noodles instead, which was a bit disappointing. That said, the bo kho itself was really good, and the noodles absorbed the flavors well. There was a lot of meat, though not all of it was tender.
Egg & Bone Marrow Shoot ($7): This was an umami bomb. On its own, it was too rich for me, but adding it to the bun bo hue broth did elevate the flavor. Fun to try once, but probably not for everyone.
The owner told me the noodles are shipped in from California and never frozen, which explains that bounce Vietnamese people care about.
They provide all the toppings and herbs such as
pork hock, Vietnamese ham, pork blood, beef shank in a bold, deep broth.
They give you fresh chili + satay chili on the side, and an herb mix of cabbage, mint, banana blossom.
They have other things on the menu. My friend got Bun Bo Nam. So happy for this addition to the ATX Asian Food scene!

Service was friendly and fast. We came shortly after opening on a weekend and waited about 15 minutes, which felt reasonable since the place was full.
The large bun bo hue was very filling with good portions of meat. The beef rib was a standout and came with a spicy, tangy sauce that was really good. Vietnamese coffee was also solid. Definitely a spot I’ll come back to.

They were packed during lunch, but the wait moved quickly and the staff kept everything flowing smoothly.
I ordered the hủ tiếu thập cẩm, and it was delicious—fresh ingredients, rich broth, and generous portions.
Definitely a spot worth returning to, and a strong addition to the area’s Vietnamese food scene.
