After an afternoon at Château Ste. Michelle, we stopped by Von’s 1000 Spirits expecting something casual and convenient. What we found instead was a sourdough-driven kitchen that genuinely impressed me — enough to earn a rare five-star rating, especially for a restaurant with multiple locations. This visit exceeded expectations in both execution and flavor.
Ambiance – 4.5/5
Von’s strikes a lively yet relaxed balance — energetic without feeling chaotic. The open kitchen and warm lighting give it a rustic, modern feel, ideal for unwinding after wine tasting. It feels social and approachable, yet still polished enough for a proper sit-down meal.

What sets Von’s apart is its dedication to sourdough — not as a gimmick, but as a defining technique. Both the pizza and pasta showcase fermentation depth and texture that go beyond standard Italian-American fare. There’s a craftsmanship here that feels intentional rather than mass-produced.

The sourdough pizza was a standout — airy yet structured, with a subtle tang that elevated every topping. The crust had proper blistering and chew, reminiscent of artisan pizzerias rather than chain-style execution.
Equally impressive was the sourdough pasta. The fermentation added complexity and body to the dish, creating a depth that’s rare in casual dining settings. It’s not often that pasta surprises me, but this one did.

Our server was attentive, knowledgeable, and genuinely welcoming. Timing was smooth, and her recommendations for drinks were spot on for my wife and helpful, and the overall hospitality felt sincere rather than transactional.

For the quality of ingredients and execution, the pricing felt extremely fair. Considering the craftsmanship behind their sourdough program, the value is exceptional.
Final Thoughts
Von’s 1000 Spirits proves that a restaurant with multiple locations can still deliver personality and precision. It’s rare that I award five stars to a franchise-style establishment, but this one earned it through thoughtful technique, excellent flavor, and polished service. I will absolutely be returning.
PARKING: Valet park, but we got there on a Sunday when it opened (11:30 AM) and the valet person wasn’t there, so we just self-parked. Stall spaces are limited, so perhaps that’s why the valet service.
SERVICE: Super amazing, as was the Seattle location. Our server Angel – very amazing server. Having great service makes everything taste way better.
MENU: Vegan and Veg-friendly dishes, a plus! Pizzas are crafted from sourdough and fired in a wood-oven, chewy pizza dough with crispy crusts and special cheeses (none of that industrial stuff), with fresh herbs. Fries are all hand-cut real stuff, not that frozen stuff. The hummus and eggplant appetizer was supremely and ridiculously delicious! Smash Burger was juicy. Bang Bang Chicken was mind-altering, according to the son.
COCKTAILS: All crafted with fresh juices and mixes, the finest spirits. My Classic Margarita came with a black lava salted rim, whoa! Flavors are all spot-on. Nothing industrial, nothing poured out of a plastic bottle from wholesale places, everything is scratch, and it shows.
As in my previous review of Von’s 1000 Spirits in Seattle, the vodka is so smooth, it’s amazing, forget Tito’s, forget Chopin, forget Gray Goose, forget Hangar One – go straight to Northwest Spirits next door and buy yourselves the best vodka (distilled 6-times like Tito’s but without the bite).
PIZZAS: You have to try the Cachio E Pepe if you like cheese pizzas, Von’s does not skimp on the quality of the cheeses on this sourdough pizza blasted in a wood oven and sprinkled with herbs! It was so good and they gave us so much food I ended up bringing a few slices back to the hotel.
Nothing was a miss here. Most times when we go out to eat there are a few dishes we liked or didn’t like, including drinks, but this place blows every place we have been out of the water, as did Von’s 1000 Spirits in Seattle.
Total bill cost: who cares!!! Which I never say in any of reviews because I pride myself in giving the total cost but this place was so good I could have run up the tab and not cared. I believe we spent about $130-ish in total for 2 pizzas, 2 appetizers, 1 side, 3 drinks, 1 burger including tax and tip for 3 persons.
Other must-tries: the boneless wings, pork confit fries, and the almond wood roasted broccoli — so many things on the menu are consistently great.
The atmosphere is lovely and very kid-friendly. They’re always happy to bring a high chair or booster, and the kids menu is such a thoughtful touch — it comes with a drawing page, crossword-style activities, two crayons, and even a little airplane to build. Both of our kiddos get so excited every time.
One small note: the burgers come with a very large side of fries. While that may be a plus for some, it feels like the fries kind of steal the spotlight from the (very tasty!) burger.
Also worth mentioning — parking can be a bit tricky. There are only about 7–8 self-parking spots, and the rest of the lot is valet. They mention valet is complimentary with a reservation, but of course tipping is expected, which can add up if you’re going frequently. A lot of people practice street though it’s at your own risk.
And the most important thing for parents — the food comes out FAST. Usually within about 10 minutes of ordering, which makes such a difference when dining with kids.
We’ll definitely keep coming back!
2nd visit on 2/14 did not disappoint. Sat at bar again and damn is this team consistent. We were freezing from playing golf and they warmed us right up with delicious cocktails and food. If we could move in and eat there forever we would! Get the baguette and burrata app. Trust us.
