The food was very good and service was speedy and friendly. We got one of the wrong rolls we wanted the Vegas roll and got the caterpillar instead. We were like, “Wheres the shrimp?” We had already dug in to try things and eaten a couple so didnt want to complain. They were near each other on the menu so maybe thats what happened. The octopus was not what i was expecting so i wouldnt recommend that. It was very spongy and different from other octopus ive had. Overall good experience.

It’s definitely busy, took a bit to get our food but it was worth the wait.

The udon isn’t you’re traditional thick noodles but it sure does taste amazing.

The guys at the sushi bar were exceptional and friendly.

It’s really nice to have a lil ramen bar. It is a bit expensive but these days I don’t know what ramen shop isn’t.
It’s definitely a little twist on your traditional Japanese food.

It was a long day of travel, we were both tired and hoping to find a good place to eat in Bush or Fort Morgan. Both towns better known for their Mexican cuisine. But surprise, there’s a Sushi restaurant in Brush! Not just any, but Guatemalans who trained in Japan to be sushi chiefs with experience if far -flung US locations. Their skill and mastery of the sushi art was amazing. We started with the grilled calamari, tender, delicate flavor this would make a great light meal. But, we moved on and ordered the Red Dragon, the Fort Morgan and the Volcano. All three were over-the-top flavorful with the Volcano making the top hit of the night. The size of the sushi rolls were generous, the rice a nice subtle flavor, the fish always the star of the show. The fish, fresh, good texture and proper flavor for the species. The chiefs took food safety serious and kept the sushi construction counter very clean. The seating area, kitchen and bathrooms; very clean and no fishy smell anywhere even at the sushi bar. The restaurant, cozy and comfortable with simple decorations, the wait staff spot on. Everyone who comes in is made to feel welcome even the repeat customers, like a big family.
We are trying to find another reason to drive back to Brush, just to have a meal at Victor’s. Not a day trip for us, but the food keeps calling us.

We went to Victor Sushi for New Year’s Eve dinner, and it was a wonderful experience. My mother and I ordered the Tiger Roll, which I highly recommend, and the Umi. While the Umi is on the pricier side, it was absolutely worth it for the quality and flavor. We also enjoyed our longtime favorites—the California Roll and the Caterpillar Roll. Everything was fresh, beautifully prepared, and consistently delicious. A great spot for a special occasion or a treat-yourself meal.

My husband and I have been wanting to try this place for awhile and we finally went Saturday. We could not decide what we wanted to try first and ended up ordering at least ten different things (our waiter was so patient with us!) including food and drinks.

We ordered a sample slab of the sake. The sake was amazing, super smooth, so was the Japanese whiskey that I ordered.

For appetizers we ordered the grilled octopus, which was so tender and flavorful, and the spring rolls. Both came up sauces that appeared to be made in house.

My husband ordered some oysters on the half shell as well. I’m not a fan of oysters so I only tried one, but he loved them!

We also ordered some sashimi and sushi that was absolutely divine. Unfortunately my husband and I were so excited to try it that I wasn’t able to get a photo before we ate most of it.

Afterwards we ordered the kalbi short ribs as well as the soft shell crab. I’m not a big fan of crab, but it was very good, had an amazing breading and was full of flavor. The short ribs came out sizzling still and I’m ashamed to say I ate all of them without letting my husband have any, they were just so good!

We finished the meal with the green tea mochi ice cream and it was such a great palate cleanser after all the food we ate.

Overall, if I could I would give this place 10/10 but the stars only go up to five. Really it was just such a wonderful experience from start to finish!

Food was very good. We had the sunshine roll, rainbow roll, volcano roll, and the sugar daddy roll. Green mussels for an appetizer. Not sure I would order the sugar daddy again. Volcano was our favorite. Kind of wished for more Japanese ambiance. (Art, music, decor, etc)

First time we came here and All that hype for a whole lot of nothing!!! we got the dinner entrees I got the chicken teriyaki and she got the sesame chicken, literally three little pieces of broccoli and carrots ‍♂️, most plain chicken I ever tasted just drenched in teriyaki sauce I could of made this plate under half the cost with double of the flavor!!! Her plate was exactly the same nothing special… we also got the hangover rolls… yeah nothing worth my money big waste of money!!! Why we never support our local businesses it’s always a big disappointment big waste of time and money!!! my home cooking exceeded all these restaurants
