This was a pretty terrible experience. We’re out-of-towners here for the week, and we were really hoping this would be a spot we’d come back to buy more food over the next several days, but we honestly can NOT recommend this restaurant. The bill after tax and before tip came to over $155 for 5 adults, and 4 of us left hungry. “Generous” portion sizes? No! Fast service? Not at all. The sushi was bland and really missed the mark. At this price point, this food really should have been better quality. The waiter was clearly stretched pretty thin across many tables, so we did not experience good service.
The two things that appeared non-mediocre: (1) there was a spicy sauce that we could add to the ramen that was very presently spicy, and (2) the ramen egg was not hard boiled. It was definitely more than soft boiled, and it was not marinated, but at LEAST it wasn’t boiled to death.
If you’re used to good sushi at fair prices, skip this place.

I travel to the area frequently, and for the last year, Victor’s has become my go-to place for lunch. The happy hour is very well priced, and I really enjoy the tuna rolls. The Seared Tuna Nigiri with shiitake vinaigrette(not on menu) is probably my favorite order, but I also really enjoy the Uno Mas roll.
The environment is clean and the staff is friendly and capable. They often have peak times where service can be a bit slower, but in general, my needs are always addressed. As someone who travels internationally quite a bit, finding such a nice sushi restaurant in a small town is very impressive. Thanks, Victor’s!

We absolutely love you guys! We have had nothing but great food and great service every time we come in. Andrew is an amazing bartender and server. Very professional kind and witty. It’s become a regular stop for us!
Update: we have had Charles twice now as our server with our very small children (1.5 & 4). He is always patient, attentive and interactive with our kids while making sure the adults are well taken care of.

I spent a few weeks in Pagosa springs and imagine my surprise when the best sushi I’ve ever had was to be found in a small town in southern Colorado. Their prices are high but the price no doubt reflects the quality. As you can see from my pictures I had a large sampling. I ate well and would go here every day if I could afford it. The staff was very friendly and quick to refill a drink. Some places when you take sushi leftovers it doesn’t stay good by the next day in the fridge. I ate my leftovers for breakfast the next day. It tasted almost as fresh as the evening before. I can’t say enough good about Victors. I look forward to returning

I was pleasantly surprised by my choices, will be going back! Started with a house salad, the portion was larger than I anticipated and was pretty tasty with the ginger dressing, I had gyoza, and they were good as well. The flamingo roll was pretty awesome. I definitely recommend it. For dessert, I had the tempura fried banana, and that was worth the calories! The best part of my visit was Cheri! She was friendly and helped me through the menu and gave awesome service!

The BEST sushi. Hands down. Amazed to find it in Pagosa, and so pleased. Andrew is a fantastic server who leaves you feeling cared for in a way that’s now becoming part of the old ways of the world. From Dark Moon’s family to Victor, THANK YOU!

Service is always good and when we bring our kids, they always put us in a place that won’t disturb the other customers which I really enjoy and they get to us right away when we have our kids there or don’t have our kids there which makes it really nice Food is always top-notch. Love their mixed drinks as well and you can always request to have your rolls deep fried, which always is a highlight for me We also usually hit up their happy hour, which makes things a little bit cheaper

Solid option, but was very slow when we went. Food was okay. We tried a helping of appetizers and sushi, but the fish was only so so. Nothing special, but then again you’re in the mountains with limited options. Drinks were good, however.

Weirdest Valentine’s Day dinner yet! No water for at least twenty minutes. Blonde lady waitress was horribly unskilled with basic tasks. I watched her take dirty plates from customers and place them onto clean tables. Garlic edamame was so good and the tiger roll was great! Bartender was very helpful but clearly left alone due to the blonde lady. Not a single Asian person working it seems which makes for an interesting sushi vibe with a menu of a million options. Best part was the guitar player. Listening to Neil Young while eating sushi served by non Asians and watching a blonde lady wander around doing very little was so strange. Oh and the chicken yakitori was three tiny skewers with teriyaki sauce. It was a super expensive dinner. First time in Pagosa Springs. Go do a sushi roll pickup! But I wouldn’t sit and eat probably.
