Definitely enjoyed my time here, coming from out of town, this is pretty much the best place in town to have some Mexican dinner. This restaurant has a wide variety menu. It really has everything and anything that you crave in Mexican food. The owner is really nice and enjoyed having a conversation. I did have the waitress Rosita, she is super friendly and has such an amazing attitude. The chips and salsa was so good I couldn’t get enough. The food was delicious, I had ordered the Alambre, which is a mixture of steak and chicken, it came out freshly hot steaming from the plate. I will be coming here again. ⭐️⭐️⭐️⭐️⭐️

I ordered the steak and shrimp nachos and the experience went downhill from the moment the food arrived. There was no sour cream, no shrimp at all, and instead they brought out chicken. The steak was dry and overcooked, and the chicken was completely undercooked to the point it was unsafe to eat.
I notified the server, and they brought out more chicken, but it was just as undercooked as the first batch. When I went to pay, I noticed I had been charged for an additional order of chicken that I never asked for and couldn’t even eat. When I questioned it, I was told I still had to pay for it. To make matters worse, a staff member told me, “If you can’t afford a $28 meal, don’t order it.”
Mistakes can happen in any kitchen, but serving raw food, charging for inedible items, and speaking to a customer that way is unacceptable. I won’t be returning.

We stopped here on the way home from a job. I had the Vargas special and my wife had the Sonora plate, we both VERY MUCH enjoyed the food and attentive service. There was initially a small issue in that our server did not speak very much English, but we got over that. This is a delightful place, a fabulous building, and great staff. We would absolutely visit here again.

DO NOT ORDER THE FAJITAS! Or anything with chicken! The fajitas actually comes with a total of 6 pieces of steak (yes I counted). The chicken on the other hand was definitely plentiful but it tastes like they pulled it out of the package and put it into a pan with NO seasoning. I never thought that chicken could taste gamey, I was wrong… We ended up sending back the chicken after two bites because it was NOT GOOD and asked for it to be taken off of our bill. The waitress did take the food, but she came back with a bill with the chicken still on. We asked the lady at the register to take off the chicken and she told us “next time know what you want” when this is a restaurant that we were dining at for the first time. The cherry on top of all of this was the 6 inch hair that we found in our salsa. So in our honest opinion, DO NOT EAT HERE.

My girlfriend Maggi and I were riding motorcycles on our way to Santa Fe, NM from Kansas City and we decided to stop in Liberal KS for the night. It was about 5:00 when we decided we wanted Chili Rellenos and found the Vargas Restaurant made them. We arrived and were seated by a very accommodating hostess, within seconds, here comes the Chips and Salsa. Followed right up by our server, Matilda wanting to take our Drink order. For Dinner, Maggi ordered the Chili Rellenos and I opted for the Ala Carte, Pork Burrito and a Chicken Taco since we were splitting one of the Two Chili’s Rellenos. Wow Oh Wow, we were so happy with our choices. The Special Red Sauce on my Burrito was incredible and the pork was tender and juicy. The Chili’s Rellenos were Deep Fried in a Crispy Crunchy Batter and filled with Beef and Cheese and the Pabano Pepper was Tender and Spicy. I Love This Place
