We kind of stumbled here coming back from Denver and did expect much.
It looked clean inside everywhere. Restrooms too.
Staff was freight and sat us right away.
They gave us some water, chips and salsa.
The chips were warm and the salsa, albeit not spicy, was good.
There are a lot of items in the menu and a lot that looks good but it was our first visit so we want with something safe.
We shared the skirt steak fajitas for two. We were torn between the skirt steak and the vegetables and asked if we could have a mix of the two as the vegetarian ones looked good too.
The waitress, Ashley, said yes.
I asked for a spicy salsa and some grilled jalapeños too.
It came out sizzling.
Right away I knew they would be good. The smell and carmalization on the veggies.
We dug in and wow.
Honestly they taste better without the tortilla. It does the dish a disservice.
The broccoli, spinach, onions, carrots and mushrooms. Yum.
The beans and rice were standard. It was ok.
The fajitas were the best I’ve had. The servers brought extra tortillas, chips ans salsa in a timely manner.
For desert we ordered fried ice cream (yes I know we sound like tourists but I like this stuff on occasion too).
We couldn’t decide on the topping so Ashley brought us a bit of all of them.
She was very accommodating and friendly.
She shared that her and her coworkers thought that our fajita idea looked so good that they made themselves some too. Lol.
Overall I give this place an A+.

Everything we tried was great. Taste is definitely on point and they are heating everything up like crazy to the point the cheese is crazy melted. Be warned the sizes are huge! If you love leftovers this is your spot for this as well lol. We will definitely all be back!

I’ve been to Vagueros a few times and the food & service has always been very good. Went last night and it was AWESOME!
My brother was in town, and it was his birthday and he wanted Mexican food so I took him to Vaqueros. He did tell me he did NOT want any ‘Happy B-Day Song BS’, as tempting as it was I didn’t mention it to the staff. After the amazing dinner, we were looking at deserts and I told him “get whatever you want, it’s your birthday!” I guess our waiter overheard me, he and a few other servers came over, put a sombrero on my bro, sang Happy Birthday, and gave him a Tequila shot. It was HILARIOUS! We were all cracking up (including my brother!). Everyone working there is so nice, the margs are great, and the food is authentic, plentiful, and tastes amazing.

We had an amazing experience at Vaqueros thanks to Melissa and her team. We came in with a group of 50 people, coordinating a group of this size is no small task, and they absolutely crushed it. Everything was handled flawlessly from start to finish.
The interaction was so fun and personal—they even played a little joke on one of my cousins, and everyone single one of us absolutely loved it!! It really set the tone and made the whole experience feel warm, lively, and memorable. You could tell our lead waitress Melissa genuinely cared about our group and was enjoying the moment with us.
We usually host our parties at On The Border, but after this experience, we’ll definitely be coming back to Vaqueros from now on. Outstanding service, great energy, and unforgettable memories! 10/10 recommend Vaqueros and make sure to ask for Melissa! ✨

It was so good, I forgot to get a pic. I will return and update with photos. Melissa was our nice server. I got the enchilada suizas, which were fantastic with nice chicken. I only wish I also tried the hard shell tacos, which looked tasty. And that large Cadillac margarita? Yum! And it’s schooner large, not some tall glass.

Good food, great service! Our club met there on a Friday night, we had 30 people or so (we had a reservation). The staff was great and took it in stride. Food was delicious and hot.

Enter into Vaqueros onto “wooden” tile floors, walls with stone, longhorn cattle photographs, an old metal milk jug, country folk pictures, and open ceilings that are painted black. I will say that the host was situation conscience, with us having littles, we were seated in a brick adorned long booth, with brown leather seats and tile tabletop, to give us space, though they were a little high and could also be hard to get into, especially if you are not a smaller size. Tables can also be found in this restaurant, with a larger party enjoying by the garage doors that look like they can be opened in during nice weather, onto the patio. TVs can be found throughout the restaurant, over 10 total, many at the bar that has beers on tap. Changing tables are in both restrooms. While this restaurant is clean overall, dust can be found on the light fixtures. Noise is readily heard from the kitchen and staff ate in the customer area. Others may enjoy, but the food did not fit our family, with the littles not enjoying the cheeseburger (yes I know we were at a Mexican restaurant, but they love burgers and wouldn’t eat these). A good sized parking lot is available, with well appointed ADA spots.

The food is average tasty Mexican food. I like the carne asada tacos and the pollo crema with mushrooms. Both are tasty! The salsa is average. The service is always average every time I go. One time the manager or owner complained that my friend and I shared a dish (it’s too much for just one of us to eat) and asked for refills on our Dr P. Soda is one of the cheapest things they serve besides rice probably. It was just kinda rude. We always both leave a tip. Oh well. It’s my friend’s favorite place to go for her birthday so we always go! I would knock it down to a 3* just because of the service alone, but the food is too good for a 3*.

Ordered the exact same fajita taco salad with chicken that I’ve ordered several times at the other Colorado Springs Vaqueros. It was SO different. Much smaller-only grilled, seasoned chicken & no fajita vegetables cooked in with the chicken. It was good, but not as good as the other location. My sister ordered chicken enchiladas and she loved hers. Chips and salsa were great–identical to the other location. I just wish the salad were the same size since the price wasn’t cheap! Love the atmosphere. Service was okay/”meh”. I would definitely go back and try something different.
For reference: The 3rd photo is what the fajita taco salad with chicken looks like at the Prominent Point Vaqueros. Same menu, same prices. VERY different salads!
