Serving warm, but raw tortillas not only ruins a taco, everybody who grew up eating homemade flour tortillas knows eating raw, unthoroughly cooked tortilla dough can be dangerous. “Empache” is known to literally gum up the works and is unhealthy to digest. Cooks seem not to busy to “cook” the tortillas. Good luck.
