You can get their meats by the lb in 1/4, 1/2 and full portions.
We ordered a little bit of everything to get a taste of the menu. They also have one homemade bbq sauce and 3 other sauces in jugs that you can pump out and all of them were very good.
For starters, we got just their cheese curds. They were good but nothing special, just your typical, delicious cheese curds.
Their smoked jalepeno sausages were a hit and the pulled pork and chicken were also tasty as well. For these, we ordered 1/4 lb of each pork and chicken. Helpful tip, toss the pulled chicken and pork in your sauce of choice and stuff their hawaiin rolls (provided with your meal) and top with coleslaw to eat it as a slider, super delicious!
We ordered a lb of their pork belly and that was delicious as well. Smoked well and tasty dipped in their sauces.
We got a 6 piece of their smoked wings. They were smoked well and very crispy. I enjoyed them but my sons said they were a little tough, they prefer a little more tender.
We also got a lb of their smoked brisket as thats one of my favorite meats when it comes to smoked food. However, I was a bit torn about this. The brisket was smoked decently but it was cut too thick, making it a bit hard to eat as i am used to briskets being sliced thin. Instead of 8-10 slices, we ended up with four large chunks. My assumption is that the brisket was probably a little over cooked, making it too tender to be sliced thinly. I did still enjoy it.
Their pork ribs were good and tender. They were tender but not fall of the bone, which is the consistency you want. We did receive like an end piece which seemed a bit over smoked and was kind of tough. The owner did ask if we wanted another one but we politely declined as if wasn’t a deal breaker. But good to know they care about their customers.
As for sides, we go their mac n cheese, cowboy beans, and cheesy potatoes. The beans were good, not too sweet. I think the Mac n Cheese and the cheesy potatoes could’ve were a little on the plain side, probably could’ve used a cheese with a bit more flavor.
My youngest got the kids chicken tenders and they came with a choice of side, we opted for fries. The tenders are your standard chicken tenders and served its purpose.
Overall, i really liked Trible B’s BBQ and think they are a place worth trying. Some things could use a bit of modifications as mentioned above but none were deal breakers. One thing i think they should offer is a sampler where you get a little of every meat choice but you could just get 1/4 lb of each and that would work as well.
A good place to try for some bbq if you’re in the area. Hoping they can fine tune their menu a little bit and become a staple here for a long time.
I wish I could 6-star this place. Price, portions, taste, and staff are amazing. I live 5 mins away, but would drive an hour and a half, regularly, to eat here. Fantastic.
They were also very good with my 2 year old. Kids and family welcome!
