Let’s break it down. The undercarriage? Oh man, it’s a masterpiece of crispiness that bottom crust hits with a charred, golden snap that’s got just the right amount of leopard spotting from the oven’s inferno. Flip a slice (yeah, I did that mid-bite for science), and you’re staring at perfection: sturdy enough to hold its ground without flopping like some weak nonsense, but still tender inside. The whole pie radiates that wood-fired vibe, with edges puffed up and blistered like they’ve been through battle and came out victorious.

This ain’t your overhyped tourist trap; Tortoise is a legit hidden gem, tucked away and flying under the radar. If you’re in Tulsa or even thinking about a road trip, drop everything and hunt this place down. It’s not just pizza; it’s an experience that’ll ruin you for the mediocre stuff forever. 10/10, would conquer again. Get there before the masses catch on.

This was one of my favorite pizza crusts ever. It had such a crispy bottom! The sauce was tangy and bright. The best part was there were so many little pepperoni cups you couldn’t see anything else on the top of this pizza. But one bite and it all came together in a delicious slice. Try it.

It’s an old airstream trailer they built a giant brick oven in. Doesn’t matter. I read the reviews and showed up with high expectations. I’m not saying it’s THE best pizza in Tulsa, but this is easily in the top ten. Maybe even five. The crust is tortilla thin and cracker crisp with a hearty flavor profile. The quality toppings in portions carefully balanced in delicious and delightful combinations with good cheese and a fantastic sauce. The sauce being of the sweeter variety, not too sweet and also not too acidic. But back to the crust! With the hot hearty, savory toppings, the deliciously creamy, melty cheese, the sweet tang of the sauce, all loaded on the crisp crust with is earthy fire kissed wholesomeness adds up to one special pie. It isn’t cheap but I’ve paid more for worse. 20 bucks a person and everyone leaves full and possibly with a box. This is absolutely worth it, this is good, delicious pizza. Made by someone that cares about pizza. 10 out of 10. All five stars. I will be back.
It’s located in the parking lot of a local brewery and takes advantage of its patio. The staff of both businesses were friendly, knowledgeable and welcoming.
If you live east of the great divide and west of the smokies, try this place out just five blocks north of Route 66 in the Pearl district of Tulsa. You’ll be glad you did!

I’ve had pizza in amazing places in nyc, San Francisco, Miami and this pizza was in par with that.

Tulsa is lucky to have a really solid pizza scene depending on what style you prefer. Purely based on the pizza, few standout in this style of pizza. If you like a light, firm, crisp, lightly charred (not burned) crust that still keeps that nice chew paired with a sauce that isn’t just a background character to the toppings, this place is exceptional.

I first made the time to try this place sometime in April of this year. I have been back more times than I can count at this point. It’s so good it might be becoming a problem. I’ve had it fresh and I’ve had it after spending time in a box. Every single time it is consistently great. Anyhow, it’s a food truck outside of a local brewer but they are two separate businesses. The food truck itself is run by a small family so they get a pass on any service issues when it’s extremely busy. They are extremely nice people. The pizza is worth waiting 45-60+ minutes when they are slammed. My only complaint is that I can’t get a 24” pie.

Had the Hornet. Pepperoni and jalapeno with a honey drizzle. It was the best pizza I’ve had in a while. I think they are a semi-permanent fixture at Nothings Left. Definitely worth the visit whether or not you’re having beers at the brewery.

Told us pizza was a 55 minute wait when there was no one at the brewery and then closed the truck about 45 minutes later.
In short: Lied about the wait time so they could close shop early. Just tell us the truth.
