During our stay on the breathtaking island of Anguilla, we made our way to Shoal Bay and instantly understood why it’s hailed as one of the Caribbean’s best beaches.
But nothing prepared us for what we’d experience at The Vibe @ Uncle Ernie’s.
Right on the sand, our beachside waitress brought over strong, delicious rum punch the kind that hits just right while soaking up the sun. Friendly, fast, and full of island charm.
Later, we walked up to the restaurant for a light bite. But with so many tempting dishes on the menu, I couldn’t choose until the owner and his lovely fiancée suggested the oxtail with rice and peas. My friend ordered the curry conch with Johnny cakes.
While the chef & her assistant worked her magic in the kitchen, the fiancée hopped behind the bar and whipped up more rum punch with a smile.
As we chatted with the owner, we learned the rich, heartfelt history of Uncle Ernie and how he’s keeping the legacy alive serving up good food, good vibes, and unforgettable moments. Then he gave us a shot of a local bush rum. It packed a kick yet very flavorful.
Then came the food…WOW
The oxtail was fall-off-the-bone tender, seasoned to perfection with just a kiss of sweetness ( i couldn’t stop licking my fingers ) The rice and peas were soft and flavorful. Even the side salad was crisp and refreshing.
The curry conch was tender, and deeply satisfying. And those johnny cakes were pillowy soft and absolutely addictive. My friend couldn’t stop raving.
The owner’s kindness stood out. Even after closing, he waited with us to make sure we had a safe ride back to our resort.
I only wish I had more time on the island. I’m already planning to come back just to try the stew chicken and curry chicken.
If you’re in Anguilla, do yourself a favor visit Uncle Ernie’s on Shoal Bay. The vibe, the food, the people it’s the soul of the island on a plate.
Peanut punch was great and the coconut conch was
gers! The owner showed us pictures of the local fish that weren’t on the menu and asked if we would like for him to catch the oddly looking honeycomb box fish for the next evening. We agreed and were pleasantly surprised. The freshness is put of this world! The service could not be better! I’d highly recommend this restaurant. It’s a typical Anguillan cuisine with the most friendly service!
Bad business and we will NOT return.
