An exceptional dining experience from start to finish. We began with the Brussels sprouts, which were absolutely delicious and set the tone for the meal. My husband ordered the pomegranate braised pork shoulder—rich, tender, and full of flavor. I had the Wagyu sirloin, and it was perfectly prepared and cooked to perfection. Every dish was thoughtful, beautifully executed, and memorable. The Pullman is a must-visit when in Glenwood Springs.

My expectations were pretty high and the Pullman absolutely exceeded them. This is Michelin star food in an unpretentious space. Yes, there are some TVs on the walls. Yes, about half of the male customers are wearing baseball caps. But the food has delightful surprises. The blue cheese house-made chips were inspired. I had the pork shoulder with cheesy grits. Cheesy grits? Expected a filling, tangy side. But these had lovely subtle notes of smoke and thyme. The pickled carrots were like crisp mangoes, and they and the pomegranate provided little sparkles that elevated the dish. The cocktails had top notch interesting flavors, and so did the two mocktails we tried, no easy feat. We had 2 mocktails, 2 cocktails, 2 appetizers 2 entrees and 2 desserts for just under $200, very reasonable IMO.

Farm to market style restaurant, very good restaurant. Love the interior/decor and lighting; it’s a very comfortable setting. The food was delicious; the butternut squash soup was so very good and the meat was tender with the right amount of flavor. I’d come back again and again, 5/5 would recommend

Took our 1 year old with us and we had a great time. We went towards their closing time so we got a nice corner half booth. Food was sooooo good. I love gnocchi now every dish we ordered, had it and I honestly was happy about that and the flavors of all dishes was so different making it a yummy ans fun experience:) cool to find out the owner is also the chef, so I am sure they take a lot of pride in the quality of their food. Thanks for the experience, worth the wait.

This place deserves at least four stars based on the food alone but is being downgraded for two factors. It was so loud that you had to raise your voice to be heard which of course makes it louder yet, to the point where it diminishes your enjoyment of the food. Secondly the sauces were great but too salty by half which also diminishes them. Cocktails were good, gin martini order and delivered dry, Negroni balanced and round. The wine list is spare,only one selection, both glass and bottle, per type but adequate. We had the pinot noir and the zinfandel both adequate. The menu is also spare but there is something for everyone. I had the pork chop. Tender, hint of the grill, very well sauced. Also ordered the Roast Chicken, also moist tender and very flavorful. Skin properly chared,charged, sauced deliciously with caveat. Coffee followed. All said we will go back endure the sound because the food warrants it.

No notes! Our experience at The Pullman was *chef’s kiss* perfection. I was admittedly nervous about finding gluten free options since the menu doesn’t clearly indicate which items are gf, but it was as simple as telling our waitress about the need, and the kitchen made it work. For appetizers, the deviled eggs and mussels are a must. And for my main, I ordered the special, which was a scallops dish. I’d rank it in the top ten meals I have ever eaten- absolutely amazing! Service-wise, all the staff were very courteous and let us stay a bit beyond their closing time, never making us feel rushed. Overall, we had a lovely time and the food did not disappoint!

What a great restaurant! We were passing though town looking for a nice dinner, when a local recommended this place. Martin our bar tender provided great service and drinks, our food and desert was amazingly great. If you’re in the area its a great choice!

Every time we come to Glenwood Spring we make it a point to have dinner atleast once at The Pullman. We have loved every single meal we have had here. In the summer days we love sitting on the patio with our dog sipping on those delicious Strawberry Fields drinks they had in the summer. Thank you Pullman for the good memories and food.
