We came for Valentine’s Day and it was one of the best dining experiences of our lives.
Starting with the atmosphere walking in, we were greeted warmly and enjoyed comfy couches. The hostess was excellent and set expectations about the menu, drinks, and holiday specials. Our server was excellent as well, very attentive and conversational.
The food was outstanding. We decided to forgo the special menu and went with three main menu items: a cultured butter board, fried brassicas, and prawns and pork belly. Holy wow. We savored every bite, and were very VERY satisfied.
On top of that we had 4 cocktails, all excellent: a whiskey/coffee old fashioned variation, a mezcal/amaro coupe, a champs elysees (an AMAZING herbal cognac sidecar variation)… but the crown jewel of the night was the Pom Noir Espresso. Every sip was better than the last in this creamy fruity espresso martini.
A cherry on top for me was the “nerd out” section of the wine menu. For a blossoming wine nerd like me, that was so cool.
The location was especially cool for us because despite its cavernous size and being packed with people, the materials on the walls, decor, etc. worked wonders to dampen the bustling noise and music. We could hear each other talk without raising our voices, but the vibe still was like a warm hug.

We visited The Hillmont, and were pleasantly surprised with the room, the food and the service. The room decor struck me as a fresh take on old-world styling—exposed brick, warm lighting, and curated accents creating a cozy yet upscale vibe, perfect for casual date nights. We loved the menu’s design around small portions that encourage sharing, offering new twists on old classics with seasonal California ingredients. We started with the Farmers Fry Basket, I’d never had a beaded fried olive, the Ahi & Avo Salad was fresh and spicy, not so classic caesar was very good and flat iron steak amazing. The waitstaff was friendly, knowledgeable, and prompt without being intrusive—guiding us effortlessly our meal. We look forward to coming back and bringing friends.

Loved the atmosphere. It was inviting and decorated nicely. Went here with some friends for Halloween. Got like 6 plates and shared between all of us. I liked the variety of food items and everything was yummy. The service was slower as our friends have been a few times and stated it hasn’t been like that before. One order got messed up and took way longer. Other than that the food was so yummy!

From start to finish, 10’s across the board. My wife and I had the best time visiting tonight for dinner. Each server was attentive and beyond thoughtful. Standouts included the sliders (definitely order one of each), butter board and for dessert the chocolate cake with a side of “one & one”. The vibe is romantic, spacious yet cozy, and cautiously colorful. We also had to mention that we really enjoyed our server, Michelle H. Don’t pass up trying a drink or two, which they include a generous amount of nonalcoholic beverages on their menu which we both enjoyed. We can’t wait to return to try the risotto cake and partake in another smoked old fashioned!

This place is pure magic!!!! Very rarely do I visit a restaurant where everything is perfect across the board, but this time, it was perfection. The food, holy crap… the food. So delicious. So memorable. The staff was excellent! The ambience. The lighting. The bar is an experience by itself, when at most restaurants, the bar is like a waiting area to get to a good table. Not at the Hillmont. Everything about this place makes this the best restaurant in Auburn, Ca in my humble opinion.
5/5. So good. Went the other day. Going back again tonight. And probably again this weekend.

If you’re in Auburn, COME HERE. Every single plate of food we’ve tried has genuinely been beyond our hopes and dreams. The service is unreal – multiple employees check in regularly making sure we have everything we need (+more!). Everything from the drink in a boot or served with smoke to the bread all the way to the wings have flavor that is out of this world, only matched by the finest chefs.

The Hillmont is exactly the kind of restaurant this town has been waiting for — unique, elevated, vibey, and full of creativity in both food and cocktails. From start to finish, our experience was incredible.
We started with the Cultured Butcher Board and the Not So Classic Caesar — which was honestly amazing, probably one of the best Caesars I’ve had. The Crisped Carnaroli was perfectly done, crispy and comforting, while the Glazed Flat Iron was rich and flavorful.
The Jumbo Wings (kimchi buffalo + dukkah) were a standout twist on a classic, the Hush Puppies were golden and addictive, and the Salted Rosemary Fries had the perfect balance of herb and salt. Every dish felt thoughtful, with bold flavor combinations that actually worked. A lovely detail that made the experience feel even more personal — the tomatoes and peaches we enjoyed came straight from Lacey’s garden, which added such a special, homegrown touch to the menu.
We couldn’t resist trying all three: The Remedy, Zeppole, and the Crème Brûlée. Each one had its own personality — but The Remedy stole the show for me.
Cocktails here are next level. Between the table we had:
• Mickey’s Boot
• Remedy Boulevardier
• Lavender Haze
• Espresso Martinis (perfect pick-me-up, smooth and not too sweet)
• A peach-mezcal-reposado special with a tajín rim (so good I forgot the name!)
Balanced, fun, and memorable. Easily some of the best cocktails in Auburn.
Shoutout to Lacey, Trevor, and Matthew — all three were incredibly attentive and knowledgeable. You could tell they genuinely cared about the experience and knew the menu inside and out.
The Hillmont nails the atmosphere — chic, modern, and vibey without trying too hard. The kind of place you want to bring friends, celebrate something special, or just treat yourself to a night out.
The Hillmont feels like it belongs in a big city, but I’m thrilled it’s right here in Auburn. The food and drinks are creative, flavors bold, and the team clearly cares about what they’re building. Hard to pick a favorite dish — but that just means I’ll be coming back often.

Most recently, we met friends for food and cocktails. The food got to our table first because the server left our cocktails at the bar.
Then we got a different server and the new server was much friendlier than the first server.
