Starting with the atmosphere walking in, we were greeted warmly and enjoyed comfy couches. The hostess was excellent and set expectations about the menu, drinks, and holiday specials. Our server was excellent as well, very attentive and conversational.
The food was outstanding. We decided to forgo the special menu and went with three main menu items: a cultured butter board, fried brassicas, and prawns and pork belly. Holy wow. We savored every bite, and were very VERY satisfied.
On top of that we had 4 cocktails, all excellent: a whiskey/coffee old fashioned variation, a mezcal/amaro coupe, a champs elysees (an AMAZING herbal cognac sidecar variation)… but the crown jewel of the night was the Pom Noir Espresso. Every sip was better than the last in this creamy fruity espresso martini.
A cherry on top for me was the “nerd out” section of the wine menu. For a blossoming wine nerd like me, that was so cool.
The location was especially cool for us because despite its cavernous size and being packed with people, the materials on the walls, decor, etc. worked wonders to dampen the bustling noise and music. We could hear each other talk without raising our voices, but the vibe still was like a warm hug.
What I loved:
– Top-notch service – Staff were friendly, attentive, and genuinely enthusiastic. Our server made excellent recommendations and checked in just enough to feel cared for.
– Creatively delicious food & drinks – Every dish I tried felt thoughtfully crafted and bursting with flavor. The cocktails were incredible, and each small plate had us guessing what delightful combination would come next.
– Prime downtown location – Situated right across from the heart of downtown Auburn, it’s a perfect spot to grab a drink and then explore downtown.
Whether you’re a local looking for a dependable night out or a visitor ready to sample quality cuisine in a charming setting, The Hillmont hits every mark. Highly recommended—can’t wait to go back!

The Hillmont is exactly the kind of restaurant this town has been waiting for — unique, elevated, vibey, and full of creativity in both food and cocktails. From start to finish, our experience was incredible.
We started with the Cultured Butcher Board and the Not So Classic Caesar — which was honestly amazing, probably one of the best Caesars I’ve had. The Crisped Carnaroli was perfectly done, crispy and comforting, while the Glazed Flat Iron was rich and flavorful.
The Jumbo Wings (kimchi buffalo + dukkah) were a standout twist on a classic, the Hush Puppies were golden and addictive, and the Salted Rosemary Fries had the perfect balance of herb and salt. Every dish felt thoughtful, with bold flavor combinations that actually worked. A lovely detail that made the experience feel even more personal — the tomatoes and peaches we enjoyed came straight from Lacey’s garden, which added such a special, homegrown touch to the menu.
We couldn’t resist trying all three: The Remedy, Zeppole, and the Crème Brûlée. Each one had its own personality — but The Remedy stole the show for me.
Cocktails here are next level. Between the table we had:

• Remedy Boulevardier
• Lavender Haze
• Espresso Martinis (perfect pick-me-up, smooth and not too sweet)
• A peach-mezcal-reposado special with a tajín rim (so good I forgot the name!)
Balanced, fun, and memorable. Easily some of the best cocktails in Auburn.
Shoutout to Lacey, Trevor, and Matthew — all three were incredibly attentive and knowledgeable. You could tell they genuinely cared about the experience and knew the menu inside and out.
The Hillmont nails the atmosphere — chic, modern, and vibey without trying too hard. The kind of place you want to bring friends, celebrate something special, or just treat yourself to a night out.
The Hillmont feels like it belongs in a big city, but I’m thrilled it’s right here in Auburn. The food and drinks are creative, flavors bold, and the team clearly cares about what they’re building. Hard to pick a favorite dish — but that just means I’ll be coming back often.
Most recently, we met friends for food and cocktails. The food got to our table first because the server left our cocktails at the bar.
Then we got a different server and the new server was much friendlier than the first server.
The food was tasty and the highlight of the visit.
