Inspired by the dark coziness of famous taverns across the pond and subtle nods to Colorado mining history, The Fortunate Prospector’s menu pulls inspiration from traditional English roots featuring such dishes as fish & chips, bangers and mash, Shepherd’s pie, and sticky toffee pudding, alongside cocktails like a Pimm’s Cup and the Single-Handed Sailor, as well as a 10-draft beer tower. Guests are immersed in the whimsical legend of Earl, the bighorn sheep who discovered gold in the Rockies and now invites all to celebrate his prosperity at the pub.

Great food but terrible service! Usually we’re pretty chill and understanding because we realize the hospitality industry is struggling but this was BAD. Went to the Fortunate Prospector last night for dinner with my husband and the restaurant was not extremely packed at the time but service was so slow! It took about 10 minutes before we had to flag down an employee walking by for waters and then it was another few minutes before our official waitress came. Water was never refilled the entire hour and a half we were there and even when we did finally order drinks it took another 10-15 minutes to arrive once we ordered them and the bar was empty. Appetizers were great we ordered the English bread and curry chips 10/10 recommend! He had the fish and chips which he gave a 10/10 and I had the bangers and mash which I gave an 8/10.

We recently had the pleasure of dining at Fortunate Prospector and I must say the experience was delightful from start to finish. The fish and chips were especially tasty, perfectly crispy on the outside and tender on the inside. What truly stood out was the impressive presentation of every dish.

A special thanks to Stephanie for her wonderful suggestions. Her knowledge and friendly demeanor added a personal touch to the experience.

Highly recommended for anyone looking for great food and warm service.

The Fortunate Prospector is a delightful spot for a quick drink inside the Gaylord Resort. The atmosphere is enjoyable, making it a great place to relax. The beers were excellent, and the staff members were friendly, adding to the positive experience. I highly recommend trying the fish and chips along with the shepherd’s pie—they’re both delicious! Whether you’re staying at the resort or just passing by, it’s definitely worth a visit

Josh was amazing server!! Friendly, attentive and just a delight:) It’s the people that elevate the dining experience from good to great and Josh made the experience exceptional. The food was delicious. I ordered the Pub Burger and it was juicy and flavorful. The bacon jam…. Yummm!! I had been recommended the sticky toffee pudding and it did not disappoint! The atmosphere was relaxed and peaceful. 10/10 I would come here again!

We had a great experience at The Fortunate Prospector. Our server, Josh, was incredibly helpful, attentive, and provided excellent service throughout the meal. We ordered the charcuterie board and the pub burger, and both were outstanding. The food was well-prepared, flavorful, and exactly what we were hoping for.

A special thank-you as well to the hostess, Ari, who was very accommodating and helped get our group of six seated quickly. From start to finish, the service and atmosphere made for a really enjoyable visit. We will definitely be back.

I went to the Fortunate Propector on November 22, 2025, for dinner. I had fish and chips. The portions were large, two big pieces of cod in a flakey batter. Delicious. The fries were large-cut, thick and moist. The tea had a nice full bodied flavor. They also had some really delicious water. I know it sounds weird but it was some of the best water I have had. My server, Josh, was amazing! He was super friendly and attentive. We had some really good conversation about Denver and the food. It’s always nice to chat with someone who obviously loves what he does. I even shared my comments with the manager. It was a great experience and I highly recommend!!

Omg where do I even start?! Ambiance was perfect, drinks were refreshing, and service was good as well. Rueben sandwich, literally the best one I’ve ever had! They use a local bakery in Boulder and the bread had the most perfect crisp on the outside without being hard as rock like a typical rye bread can be and the cheese pull was magnificent! The bangers and mash, so delish and everything my wife was looking for! The gravy was like a mixture of brown gravy and French onion soup, so tasty! The curry chips appetizer was incredible as well, it’s a huge portion too. Don’t forget the warm sticky toffee pudding, my gosh the perfect ending! Highly recommend!

This is such a fun place to eat! The atmosphere is cozy and warm which is nice. There were plenty of food and cocktail options to choose from!

The cottage pie is a MUST order! So is the Ruben! We wanted to try the fish and chips, but that would have been too much!

The French martini was nice and light!

I ate there for breakfast the next morning as well! A slightly small menu I would say, but the food was good! I ordered the Prospectors Breakfast with scrambled eggs and sourdough toast and bacon for the meat. The bacon was cooked perfectly! The potatoes were well seasoned. Pretty cheap in my eyes too!
