Who Is She
My date took me here for cocktails, and let me just say this place exceeded every expectation. He told me it was a “made-to-order” cocktail spot where the bartender creates your drink based on what you like and don’t like. I had never experienced anything like that before, and now I’m obsessed!
The moment we walked in, the ambiance hit dim lighting, intimate vibe, and décor that felt modern but cozy at the same time. The lighting fixtures, the bar setup, everything was perfectly on brand for the kind of elevated experience they offer.
The bartender explained there’s no cocktail menu instead, you tell them your preferences and they customize your drink. I told her I wanted something that gave paradise feels but still had a wake-me-up energy tequila-based, no orange flavor. When I say she delivered, I mean it. The color, the flavor, the freshness it was literally a tropical dream in a glass that instantly lifted my mood.
My date ordered a gin drink and loved his too smooth, balanced, and perfectly made. You can tell the bartenders here take real pride in their craft.
The only small disappointment was that the kitchen had already closed, and I was craving their slaw dog. So yes, I’ll definitely be back to try the food next time because I already know it’s going to match the quality of their drinks.
Overall, this spot is a must-visit if you love cocktails with creativity, conversation, and character. Collins Bar I’ll definitely see you again soon.

It’s a really nice spot, great atmosphere. I have only been twice and the drinks have been well made each time. I will say the last time I was in here it was a bit busier, and the music was very loud, so I ended up leaving early, because I was not able to have a conversation with the person I was with without yelling. I’ll definitely give it another go though.

Neat little place. The atmosphere is great and the decor is outstanding. The cocktails are craft and made to your tastes so you can tell your bartender what flavor profiles and liqour you’d prefer and they’ll make something to your liking. The drinks tasted as wonderful as they looked.

A hidden gem in Birmingham. I like to challenge a bartenders skills to see if they will attempt to make a drink that is not common but you cannot do that here. Every drink is customized based off what you tell them you like. However, you do have the option of order basics. The food was unexpectedly fantastic but yet simple. Nice vibe and atmosphere as well. Great for a date night or being out with friends. My group came in around 11:30pm and the kitchens closes at 1am.

Cool vibes inside this bar. You tell the server or bartender what you like (they asked us 3 questions, I think) and then they make a drink custom for you. We enjoyed our experience and would definitely go back!

Very great spot. Drinks are excellent with a “trust your bartender” option. They have tons of great snacks options and a ten dollar cheese plate. My friends and I loved it will be back. Music was also very good.

Great décor with big paper airplanes on the ceiling and a giant periodic table behind the bar. There is no cocktail menu so the bartenders whip up something according to what you tell them you like. I didn’t do a great job describing what I was looking for (because I didn’t know for sure) so my cocktail was very very good but not great. I feel like I should have elaborated more. Will definitely return and fine tune the system.

This was a cool bar to just chill at. I did not know what I wanted to drink so the waitress asked me about 6 questions and then came back with a drink that was very tasty. I would recommend doing that and see what they come up with for you. I would go back again.
