I was taken to Butcher’s Cellar for my birthday, and overall I absolutely loved the experience. We tried a variety of appetizers and sides, and everything we had was amazing. I ordered the pomegranate cocktail, which was really good, and my fiancé enjoyed his old fashioned as well. My only small letdown was my short rib lo mein, it tasted great flavorwise, but the noodles were chewy and hard. I’m being optimistic and chalking it up to an off day, especially since everything else was so good. The layered potatoes, corn ribs, mashed potatoes, and especially the tuna toast were all great dishes. To top it off, I received a complimentary blueberry crème brûlée, which I loved. Aside from the noodle issue, this place would honestly be great even just to go for drinks, sides, and appetizers alone. A wonderful spot for a any occasion!

Went there last night for the first time and we will go back again and again! Had the Bao Buns and the thick slab of bacon for apps. My wife, who never finishes a meal, ate BOTH Bao buns and half of my bacon! It was just too good. We also had the rib eye and miso salmon. Hands down, no doubt, best ribeye I ever had in Texas! My wife LOVED the miso salmon that somehow she ate it all! Had a side of the 1000 layer potatoes and I was in heaven! I will for sure order those every single time. You thought you had potatoes before, no, not till you had these!
For dessert she had the crem Brule and I had the key lime cheesecake. All simply amazing! I also can not praise our server, Robert, enough. He was funny, witty, friendly and knew the menu inside and out. Was able to describe each dishes flavor profile and was spot on with everything he said. He made the experience a, well, experience! Have already decided we are going there for every occasion. Valentines day, birth days, laundry night, trash day… any time I have a reason!

What a great experience. Most of my favorite food is in NY but who knew they had this gem in TX. Food was top notch. The server explained the chefs were award winning and they definitely showed their skills. Service was next level! 5 stars across the board.

The Wife and I had dinner here last night and was wowed by what I consider to be an EXCEPTIONAL and a Significant Emotional Food Experience. From our waiter Jennifer to the Manager and the Chef! Lets start at the beginning….. the 1000 layer potatoes were soo delicious from a crispy exterior to the moist interior was melt in your mouth. The dumplings were also amazing, the sauce drizzled on top was so good I dipped the 1000 layer potatoes in it and was in awe…I could have had a side shot of it all on its own. We also had the Shrimp toast and as Shrimp is one of those items I could eat a few pounds of was amazed at the perfection at which it was prepared. We then moved on to the 12oz Wagyu Stip (we shared that) and let me perfectly clear no restaurant has ever prepared a steak and served it proper the 1st time….Rare! and let me just say that the seasoning with the butter on top was to die for. Hats off to you Chef. We also had the Brussel sprouts and that my friend is a must at every meal. Now our waiter Jenn recommended a desert that we typically would not order but she insisted it was underrated and man oh man was she right. My wife and I are not big on spice cake but she nailed it. This is the desert to have not spice forward like I imagined but how subtle and the sauce on top just phenomenal. Thank you Team Butcher’s Cellar your entire staff made this an amazing experience We WILL be back.

Anniversary Dinner That Missed the Mark

We chose Butcher’s Cellar for our 18th anniversary. It was our first visit, and the staff knew we were celebrating. Unfortunately, the experience did not match the occasion — or the price.

We dined on a Saturday night. The atmosphere was nice enough, but the service felt inattentive and disorganized. We waited over an hour for our food, while tables seated after us were served before we were. No one proactively explained the delay or checked in with us.
When the food finally arrived, both steaks were overcooked.

I ordered the $75 ribeye medium rare. It came out overdone. I sent it back, and instead of properly correcting it, it was clearly pressed on the grill to speed things up. The replacement came back uneven — half medium rare, half medium well. For a $75 steak at a supposed high-end steakhouse, that’s unacceptable and slopy.

My husband ordered the $48 Wagyu with $8 shrimp. The shrimp was actually the best part of the entire meal. The Wagyu itself was tough — which defeats the entire point of ordering Wagyu in the first place.

The $10 corn ribs were bland and cold. The baked mac and cheese ($12) felt thrown together with a lack of care. The $17 1000-layer potatoes were decent, but not memorable.

After tax, we spent $184. For that price, you expect attention to detail, quality control, and service that feels intentional — especially on a milestone anniversary.

There was no visit from management, no meaningful acknowledgment of the issues, and no real attempt to make the experience right.
We left disappointed and unlikely to return.

I recently visited Butcher’s Cellar, and it was an absolutely unforgettable experience. From the moment I walked in, the atmosphere was warm, stylish, and inviting—setting the perfect tone for the evening.

I ordered the 16oz strip steak, medium rare, and it was perfection: juicy, tender, and cooked with precision. The Brussels sprouts were simply to die for—crisp, flavorful, and easily some of the best I’ve ever had. To top it off, I paired the meal with a Pinot Noir Juggernaut, which balanced everything beautifully and made the experience even more memorable.

What made the evening truly exceptional was the service. Our server, Jennifer, was impeccable—attentive without being intrusive, incredibly knowledgeable, and such a joy to chat with. She elevated the whole evening with her warmth and professionalism.

It’s rare to find a place that gets everything right food, service, wine, and atmosphere but Butcher’s Cellar exceeded every expectation. Without a doubt, this was one of the best dining experiences I’ve had in recent memory, and I’m already excited to go back.

How… HOW?! How did they do it?!
Every single bite was pure culinary perfection. The food here was unbelievably impeccable — the flavors, the fusion, the textures — unlike anything I’ve ever experienced before. And I’ve eaten all around the world: fine dining, Michelin-level spots, and every top-rated steakhouse in Dallas. None of them come close to what’s happening right here in Waco.

The Brussels sprouts? I could’ve eaten them as a main course — crisp, savory, and bursting with depth. The layered potato was a total masterpiece — crunchy yet soft, subtle yet powerful, the kind of dish that makes you stop mid-bite just to marvel at it.

Every piece of sushi was flawless: fresh, beautifully cut, perfectly seasoned, and layered with care. The steak — tender, buttery, melt-in-your-mouth perfection — cooked to absolute precision, and that roasted garlic on the side? Genius. It elevated the entire experience.

And believe it or not, the baby gem salad might just steal the show. One of the best salads I’ve ever had — light, crisp, full of flavor, with a dressing that’s unlike anything I’ve ever tasted.

Even the cocktails were next-level — the apple old-fashioned in particular was divine. Every sip, every dish felt intentional, refined, and crafted by someone who truly understands flavor and balance.

I honestly wish I could’ve ordered the entire menu — because after this experience, I’m convinced you simply can’t go wrong here. This place isn’t just a restaurant. It’s a revelation.

Jill, our waitress, was absolutely wonderful. She was so welcoming and was very attentive to us. Valentine’s Day can be a busy day for the restaurant industry and she made it seem like a piece of cake. Will definitely be recommending her to all my friends when dining here. The food was amazing as well! Everything came out in a timely manner. The drinks were amazing and the atmosphere was so cozy. My boyfriend and I will definitely be back

Amazing. You could easily pick this restaurant up and put it in Austin and it would do wonders.

Service did feel a little too laid back for an establishment like this. I believe my servers name was April. She was sweet and kind but needs to be brushed up on fine dining edict.

The wine we had was amazing, and our group truly enjoyed everything about this place.
