What a stunning restaurant! The view is gorgeous and they have a beautiful indoor and outdoor patio area that overlooks the western mountain ridge. Inside may not have the same view but it is expertly decorated and has a full open kitchen to watch the edible masterpieces be created. The staff is top notch, attentive and friendly in every interaction.
I visited for a private party luncheon and didn’t order from the menu but was able to sample some truly divine eats curated especially for this occasion. Have you had sushi freshly prepared from an actual whole fish? Well that was my highlight item of the meal and it was divine! I also had the most refreshing pomegranate aperol spritz. I don’t make it to Castle Rock often but this is a destination restaurant worth coming back to try the actual menu items for.

My husband & I went for dinner on Valentine’s Day and let me tell you we are so glad we did! Amazing food, service and atmosphere with beautiful mountain views. The sushi was the best we’ve ever had & we have had tons of sushi-we had the hummingbird roll. They use real crab-not artificial & the fish they have is the same that Sushi Den in Denver uses-which is super-duper fresh! We also got the polanco steak florentine which was amazing with a side of truffle fries & grilled asparagus. My husband had the old fashioned which he loved & I had a French 75(add raspberry liquor) – it was perfection. We also had the carrot cake & key lime pie to go-they were both delicious! Phenomenal meal overall! We can’t wait to visit again. Our server Ethan was so kind & helpful while also very knowledgeable! So glad to have such a wonderful restaurant near by! (Side note: I research new restaurants heavily online before visiting & some of the negative reviews could not be further from the truth-I almost didn’t try this place because of a few of the negative reviews, simply because I do not like wasting money but I assure you this place is worth trying again and again. We will definitely be back, it’s our new fav! )

We decided to celebrate my mom’s birthday at The Brinkerhoff and were not disappointed. The restaurant is stunning with gorgeous views of the front range. Our waiter, Vince, was great. Gave us a run down of the menu and checked in often to see how things were going. Our drinks were never empty and he had great suggestions on what to order. We had The Chopped Club Salad and The Diablo Sandwich, both of which were excellent. For dessert we went with the Key Lime Pie. It had an incredible pecan crust and homemade whipped cream on top. The Brinkerhoff is spendy but worth it.

My husband and I went out for an early dinner here because we had heard the sunsets were beautiful. Well, they definitely didn’t disappoint! The views and the atmosphere were beautiful. I loved the interior decor with the chandeliers and the stone wall. It was our first time here so we were a little unsure of what to order. We got drinks, which were both great, we also started with an appetizer and decided on the truffle fries. These were SO good!! Must try!
Our entrees were the Black gold NY strip steak and the Chicharron de ribeye. These steak was phenomenal, and the billionaires butter added an interesting touch of sweetness to it. The Chicharron de ribeye was good, and I can appreciate the intent of making it taste and appear as a Chicharron. However, I don’t feel that it was worth the $48 for this dish. Now to my favorite part, the dessert! We had the tres leches cake and it was so perfect and delectable! It wasn’t too sweet and the berries all balanced it out. I would definitely make the drive just for that alone. Overall, it was a great experience and would recommend for anyone looking to try something new out!

Wow wow wow- I think I have a new favorite restaurant! The staff was very professional, friendly and helpful in choosing what to order. The atmosphere is elegant and makes you feel confident and classy. I usually don’t like a cocktail to be too sweet and the Spanish gin & tonic was perfect. And the food.. absolutely amazing. We ordered the burrata, chicharron de ribeye, and fire roasted chicken. I can’t wait to come back and try something different on the menu, highly recommend!

Absolutely phenomenal experience from start to finish! You will need to make a reservation here. Amazing cocktails, apps, sushi rolls, steak and dessert. To fully indulge, expect to spend over $300 between two people if you will be getting apps, drinks, entrees and dessert. Very much worth it and they comped our dessert for our anniversary! Absolutely love this place and will be back soon.

Went here for my birthday lunch and it did not disappoint! My husband had a tenderloin, which he absolutely loved. The mashed potatoes were a hit with the whole table. My crabcake salad was absolutely to die for (no filler!)!! The prime rib “sushi” roll was beyond outstanding! Even my picky teen enjoyed herself. The views are stunning, as well! Can’t wait to go back and try a few different dishes.

My husband and I went to dinner on Monday evening. From the moment we arrived to the moment we left it was an incredible experience. Our server Cassidy was unbelievably professional and helped us pick just the right items for our special night. We ordered an appetizer, steak, lamb, 2 sides, and dessert and not one crumb was left. I made a reservation ahead, and so glad I did! We got seated inside and we were lucky to get the mountainside view! (It can be a little awkward at first because you’re sitting right in front of the booth and they are all facing you.)
I had little expectations because I usually don’t trust influencer videos and it’s hard to wrap your mind around a restaurant being Mexican steakhouse and sushi.
Here’s what we got!
1. Coconut tuna roll: This had a nice kick from the jalapeños. The macadamia nut was interesting and had a creamy texture as you chewed the sushi. (You have to eat this in one bite to experience all the flavors at once!) The coconut flakes was too much coconut for me. I brushed it off and it was delicious!
2. Little gem caeser: the corn on this salad is what makes this sooo delicious!
3. Chipotle glazed wagyu short ribs: you know, I want to go sit and enjoy the view and eat this whole dish by myself. It wasn’t too sweet or overwhelming. The meat was so tender and it practically melted. The bone slipped right off the meat, and it was divine!
I’ll definitely go back. Either by myself or with friends!

Definitely worth the drive from COS! We were up getting some shopping done and saw that this restaurant had recently opened and decided to give it a try. Everything was excellent The Atmosphere, the Food and the Service were all top notch. The sushi was fresh and inventive. We especially enjoyed the Prime Rib Beef Roll! The Truffle Fries were some of the best we’ve had in a long time. We will absolutely be back in the near future!
