A unique steakhouse in a town that tries hard to come across as hipster-friendly with a lot of ‘unique’ restaurants. Things get busy early at The Cork due to happy hour deals and specials. Service is quick, pleasant and friendly and contributes to the overall positive experience. The food is delicious, and while expensive, not outrageously so.

Nice restaurant for a fancy dinner! Pricing is about what you’d expect for fine dining, not cheap, but the service is great and the food is decent (although maybe a littttttttle overpriced, they do have a happy hour with a limited selection of items from their menu which helps!). The steak in particular was excellent!! Large wine selection with good house wine selections and cozy ambiance. Feels very rustic. We would come back if we had to celebrate a special occasion in the future.

Celebrated our 15th wedding anniversary at Boulder Cork and it could not have been more perfect. From the moment we walked in, the atmosphere felt warm and special.

Our server, Brayden, was perfectly attentive — present when you needed him and never intrusive. He made the entire evening feel effortless and celebratory.

The food was absolutely amazing from start to finish. Every dish was flavorful, beautifully prepared, and memorable. It truly felt like the perfect place to celebrate such a special milestone.

Highly recommend for a date night, celebration, or anytime you want an exceptional dining experience.

We had a reservation for 8 p.m. Our server seemed to be in a rush to get our order, then told us that the kitchen closes around 8 p.m. We learned that it was time for her to be sent home, as it was the end of her shift, so someone else took over. P.S. I cannot discredit that she was very kind and pleasant despite it being the end of her day.

We had ordered two drinks: a margarita and an old fashioned. Both of the drinks came within 10 minutes. The margarita was sour, as if it were made with instant lemon juice powder. The old fashioned was too sweet, overwhelmingly tasted of bitters, and was oddly finished off with pebble ice. The old fashioned was sent back and exchanged for wine.

We put in our order for a steak dish and a fish dish, which came out promptly but were both mediocre at best and lacking in luster.

This place isn’t worth half of what it costs. But if it is lacking because we were seated at the end of someone’s shift, then two stars for service is generous.

Nevertheless, the atmosphere inside is beautiful and very classic.

Quick and kind service! The staff were all very accommodating and friendly. Chicken enchiladas were good, but the beans had an odd taste. Not sure I would order the dish again, but the steak was delicious.

We stopped at The Boulder Cork on our way back to Denver from the Rocky Mountains with a party of 10. I had called ahead and confirmed there would be no automatic gratuity.

Food? Mediocre. But we were hungry, so fine.

The real show started when it was time to pay.

Only after everyone was ready to leave did the server inform us that the entire table would be on one single check. Interesting timing. We asked to split it. He agreed.

We handed over three credit cards.

We received one card back.

Then we were told we never gave them the other two cards and that the remaining balance was our fault — even though charges were already pending in my banking app.

At this point, I was literally crawling under the table with a flashlight like an idiot, checking under chairs and booths, because apparently I had imagined handing over my credit card.

When I asked the manager to check the cameras, she immediately said we never put the cards down and implied this was our mistake.

Shortly after that conversation, one of the missing cards was returned and the server apologized, admitting it was his error.

The manager’s response?
“That’s the reason we don’t split checks.”

And she walked away.

To make things more interesting, the checks ended up including a 20% gratuity, despite being told in advance there would be no automatic tip.

As of the time of writing this review, one card is still missing.

If losing customers’ credit cards, blaming them for it, and adding automatic gratuity is part of the “established steakhouse” experience, then they’ve perfected it.

My son took me here for dinner and it was phenomenal. The service was impeccable. I had a New York steak that was absolutely delicious. He had the prime rib and he said it was phenomenal . We had an artichoke for an appetizer that was very good and mushrooms as a side and the cork potatoes. All of that was very good. Couldn’t eat it all but it was all very good. I asked for a Grand Marnier in a warmed snifter for dessert after dinner and it was the first place in probably 10 years, that brought me a Grand Marnier in a warm snifter on a cup of hot water. People don’t know how to serve this anymore, but they did an excellent job. Thank you so much! I can’t wait to go again!

Dined in for happy hour this evening after getting engaged. We have always loved the cork and today reaffirmed the very reason why! Eduardo was our waiter and he was attentive and incredibly kind. He offered to take our photo and brought back a card with the photo in it! He also surprised us with their complimentary mud cake and it was HUGE and delicious. The food and cocktails were good as always but the attentiveness really stood out. Thank you, Eduardo!
