In the heart of Pullman, The Black Cypress is that rare gem: a restaurant that feels both worldly and deeply rooted in the Palouse. Greek fire meets Palouse soul: wood-kissed souvlakia, a majestic ribeye with béarnaise butter, lamb chops fragrant with wild oregano—every plate pure simplicity, masterfully done. Candlelight, brick, and chandeliers create an intimate stage for life’s milestones. Craft cocktails rank among the region’s finest (the Old Fashioned is legendary), backed by a wine list that roams Walla Walla to the Mediterranean. Pullman’s undisputed destination for graduations, anniversaries, and intimate celebrations. Reserve early—excellence this understated is always discovered.
Greek & Italian eats served in industrial-chic spot with brick walls, tented ceiling & cocktails.

The atmosphere is unique in the sense of the exposed brick, low light, and use of mirrors to make the place feel bigger. The warm colors of the restaurant definitely eased the feeling of being new to fine dining.
The service was also a great experience in introduction to fine dining, and our waitress took very good care of us. Checked in when necessary, but let us enjoy our evening as well. A welcome change!
The food was fantastic! We tried the Carbonara suggested by our waitress, the ribeye, and the cheese sandwiches (which are to die for). The carbonara was excellent in taste, had a nice rich flavor that combined well with the salt of the bacon. The ribeye we ordered medium rare, which was perfect as well. Had a nice smoke ring, was tender and flavorful.
Overall, I’d recommend going more than once. As I’m itching to do the same. It’s a good place for friends, family, date night (which I’ll be doing next) and worth making a reservation for!
Side note, try the bacon! So good!
Overall it was a great experience.
Whether you’re looking for a nice dinner to celebrate something special, or an upscale meal just because this place is the spot just for that!
The Bad: Extremely slow service, our waiter was not paying close attention to our large party and we had to ask/remind him multiple times before we got drinks/entrees we had ordered. I’m sure the medium-rare steak I ordered would’ve been great had it not come out well-done.
The Ugly: There was a dead spider floating in the milk we ordered for our son.
