I finally sat down Tani this weekend after hearing everyone say Ethan was doing sushi the right way, up close, personal, and without shortcuts.
The setup pulls you in immediately. There’s no fridge or barrier between you and the chef. You see everything, and it makes the whole experience feel honest and intentional.
I started with the Crab Rangoons, real crab, packed full, hand‑made, with a duck sauce boosted by Sichuan chili crisp. The Tani Roll was balanced and clean, with the sauce supporting the fish instead of covering it up. The fish flown in weekly from Japan was the highlight; every piece was seasoned and garnished with real care. I finished with Ahi topped with caviar, the perfect ending.
Ethan is a craftsman, but more importantly, he’s a guy who loves what he does. You can hear it when he talks, see it in the way he handles the fish, taste it in every bite. He’s chasing the best ingredients he can get his hands on, and he’s not cutting corners.
Sit at the bar, order some sake, and let him take care of you.

We were beyond pleased to find this gem located within Golf Garage. Sushi chef, Ethan, is passionate about his offerings and great with recommendations and customizations. It’s immediately obvious that Tani is doing things nobody else in the valley is. All the fish is aged to perfection and many are dry rubbed. Ethan puts a tremendous emphasis on locally sourced ingredients and provided great insight on his sake selections. He guided us through our meal and explained why his product is different than all others in a way that I cannot portray. If you’re looking for an incredible sushi experience, please don’t just take my word for it…. go to Tani and let Ethan explain the incredible things he’s doing now, and what he has planned for the future! The Tani roll was by far the best sushi I have ever had! I have only had one other taste of Albacore tuna that was a buttery and amazing as this was in my life and it was hosted by a millionaire. The care and attention to detail along with the explanation given to us by the owner of how he cared for each fish differently and why it contributes to the taste of the rolls was incredible to hear and then taste. If there were 10 stars I would give them now!
