For 7 dollars this is one of the biggest and most affordable breakfast burritos you’ll find in the area. My one gripe is the potato egg ratio felt a little off. I think it could have benefitted from an extra egg and a little more cheese in it

I’m Mexican and this is literally the worst Mexican food I’ve ever had in my life. I wish I was kidding. In a place like Arizona or California, or even in more diverse/more Hispanic towns, this food cart would not last 3 months serving the food they do. I’ve tried the birria and lengua and it is consistently insipid and low quality. The prices are high for the quality you get.
Please start using bones for the birria so it is not watery (it should be slow cooked with bone so you release the collagen and get that thickness in the broth that is so dear), and do not be so afraid of using salt and spices!
P.S. if you love birria, do yourself a favor and visit Kike’s in Salem. That’s my yardstick for good birria in Oregon.

A really nice food truck in a well-established pod. Staff are always friendly and food is ready quick.
They do have an enclosed seating area with some heating so it’s comfy to wait even in the winter.

As a connoisseur of vegetarian breakfast burritos, I can say without a doubt that Tacos Mex Birriera’s vegetarian breakfast burrito is the best in Eugene and one of the best I’ve ever had. El Super Burrito a willamette also a contender for top spot. Cost, portion size, service, hot sauces. All great.

Each taco proved to be a little above average compared to your typical street taco offerings, with the Chorizo taco standing out particularly. It was notably better than what I’ve encountered at other locations, packed with flavor and cooked to perfection.
