Listen. Listen. I am not dramatic (okay, maybe a little), but Tacos El Rey in Meeker, Colorado just changed my life, my husband’s life, and possibly healed three generations of ancestral trauma.
We rolled up thinking we were just getting lunch, and instead we stumbled into the culinary gates of heaven.
THE QUESABIRRIA?
Oh. My. God.
I’m talking cheese pulls that defy physics, meat so tender it falls apart just because you made eye contact with it, and consomé so rich and flavorful I considered writing it into my will. Perfect tang, perfect kick, perfect savory umami balance. You could dunk a shoe in that broth and it would still taste Michelin-star quality.
THE BIRRIA RAMEN?
I was not prepared.
It’s like someone looked at regular ramen and said, “What if we made this insane?” It’s cozy, spicy, savory, slightly tangy, and every bite hits like a hug from someone who knows exactly how stressed you are. I would swim across the ocean for another bowl. I would do paperwork for another bowl. THAT’S how good it is.
THE CHORIZo??
My husband took one bite and immediately went silent — like DEAD silent — because it took him straight back to his memaw’s kitchen. Authentic, perfectly seasoned, just the right crisp. You know the chorizo you eat and you’re like “oh THIS is the real stuff”? Yeah. That.
THE CALI BURRITO?
A brick of happiness.
Huge portion, everything seasoned perfectly, FRESH homemade guac that tasted like someone’s abuela made it with love and maybe a little attitude. It was heavy in the best way, like you know this burrito is about to hold you through your problems.
AND LET ME TELL YOU ABOUT THE STUFFED CHURROS.
If you do not order these, you messed up.
Stuffed with a milk-based filling that tastes like dulce de leche got married to caramel during pumpkin spice season. Crunchy, warm, sweet, slightly spiced… absolutely ridiculous. I would fight someone in a Walmart parking lot for these.
Portions? Generous.
Seasoning? Perfect.
Service? Amazing.
Food? Worth buying a plane ticket for. Honestly worth moving here for.
