Latinos Tacos sold their business a while back, now the sister of the owners other original Tacos Colima (formerly on Middleton Rd in Nampa, currently in downtown Caldwell) is running the new Tacos Colima in Star.
Long and short- they are just as good as the old Latinos Tacos, but tacos Colima sells a GREAT Chicharrone taco and they add a bit of cabbage on top, the tacos Colima way.
I had Carnitas, Adobada, Chorizo, Asada and Chicharrones. They were all good, though the Asada was a tad basic and the Chorizo wasn’t as greasy as I would like.
The Carnitas and Adobada were both good and tasty.
The Chicharrones was great, very meaty, almost as meaty as Los Pinos in Mountain Home.
Salsas are good, green is thick, red has a little heat. Tortillas are put on the grill for a while, not as oily as Latinos was. I like both ways and both are much better than straight from the bag.
Over all it’s a little higher rank that Latinos because of that Chicharrone.
Great value, only $2 a piece, and since it’s so close to home, I get to enjoy my Siembra Azul with it!

It was so alarmingly odd-flavored that we were worried that something was expired or cross-contaminated or spoiled.
The other slight problem was the lady at the counter was very short with me and unfriendly for no reason. Didn’t say hi or anything, just basically asked me what I wanted to order. Maybe she’s just having a bad day or something but that doesn’t mean you get to treat others poorly.
I’m not sure why we had such a bad experience considering this place has such a high rating.

There’s no way that carnitas burrito was supposed to taste like that.
It is a food truck/trailer located off Main Street in the NW corner of the Star Merc parking lot. The woman that owns/runs it is most likely originally from Mexico. There is an umbrella and picnic table out in front of it, but you will most likely want to do take out.
Their specialty seems to be their tacos. They are street taco size, so I would recommend three to be satisfied. They use double tortillas, and offer pollo, asada, carnitas, and Chicharrón (for $.50 more). At $2 a taco, I think it’s a good deal.
Unfortunately, when we arrived around 3:30, they were out of carnitas, which is my wife’s favorite. Apparently, they had a rush on them today (note to self: come early). So we had a combination of the other three. The meat could have been seasoned a little more, but they were definitely tasty.
We will definitely be back. As former lifelong Southern Californians, we love good Mexican food. Here at Tacos Colima, we think we’ve found it.
