I finally got the chance to stop by as it was on my list to try. I had heard several people recommend the place for their amazing choices in different meats all seasoned and cooked great. My husband’s order included to Apson taco. Must be the #1 item we would recommend to try when stopping here.
It’s a covered outdoor seating area and you get to grab your own toppings of choice.
Would come here again. It was all very delicious and the price is great for the quality and amount of food you get.
I just finished four tacos from Tacos Apson—two cabeza, two carne asada—and I’m still riding the flavor wave.
Let’s start with the cabeza tacos, because… wow.
The meat is butter-soft, almost melting as soon as it hits your tongue. Every bite feels rich and silky, with that deep, slow-cooked beef flavor that only cabeza can give you. And then the corn tortillas—soft, warm, slightly steamy—just hug the meat. No resistance, no fight. It’s this smooth, luxurious bite where everything blends together. You don’t even chew so much as experience it.
Then you switch gears to the carne asada tacos, and it’s a totally different kind of joy.
These are crunchy on the edges, springy in the middle, with that perfect char from the grill. The meat has chew, but in a satisfying way—juicy, beefy, smoky. And those flour tortillas? Chewy, flavorful, and sturdy, with that slight elasticity that snaps back when you bite into it. The contrast between the crisp beef and the bouncy tortilla is chef’s kiss.
And now—let’s talk about the salsa verde.
This stuff is alive. Bright, tangy, herbaceous, and spicy in the best way. Every bite gets lit up—your lips tingle, your mouth wakes up, and suddenly you’re going back in for another bite without even thinking. It doesn’t overpower; it elevates. It cuts through the richness of the cabeza and dances perfectly with the char of the asada.
This is the kind of taco meal where you stop mid-bite, shake your head a little, and think:
“Man… this is why tacos exist.”
The tacos easy rasurado and beef rib plate were absolutely phenomenal. I’ve been to Mexico City and even the tacos there pale in comparison to this gem.
I didn’t like Tucson at all because of the heat, but I’d move there just to have these tacos daily. Best taco shop in Tucson bar none.
