This place used to have the most delicious smothered pork avocado burrito. I ordered 2 pork avocado burritos smothered, the kid taking the order asked what kind of chili i said mild. However when the order was ready it was just two burritos wrapped in foil. I look at the one that took the order and raised the burritos in my hand up some and said I ordered these smothered? And he looked confused, so i reminded him he asked me what kind of chili and I said mild. He looked pissed! The kid making the food saw the look on his coworkers face and spoke up, oh no problem I’ll get it. I mentioned I didn’t want to be a pain, so he could just put it in a bowl if that would be easier, to that he responded yeah i got you. So I was thinking great an easy compromise.
However, my husband absolutely loves spicy stuff, eats habenaros raw, and loves green chili. So as soon as I got it to the car and we’re pulling out of the Parking lot. He’s opening the chili, takes a sip and says.Oh my God, that is hot! Like really really hot! I told him i ordered mild because i wanted it over my burrito and figured he did too, and he said your not gonna eat this its burning my mouth off. There is no way that boy gave me mild, and no way that was an accident. I think they were pissed that they had a customer 20mins before close and didnt like that I had a problem paying over $37 for burritos that werent smothered like i asked and paid for; but they got their revenge, even my hubby didnt eat that green chili. Rude!

I stopped at the Taco Shop for breakfast burritos. I ordered a bacon special with green chili and cheese inside to go. It was medium to large in size. The tortilla was kind of stale. The outside was slightly toasted. The contents were proportionate. There was plenty of bacon, eggs, cubed potatoes, cheese and green chili. The green chili wasn’t overly hot, but had a good flavor. The staff is friendly. It seemed clean inside. A quality and quantity for the cost was average. It was a fine breakfast burrito.

We will hit Taco Stop for taco Tuesdays. From there regular price the discount basically makes it buy two tacos get one free. The tacos are basic but just have a good taste. They accidentally made my daughter’s tacos wrong and had no problem correcting it and let us keep the ones that were made wrong. There were 3 young men maybe still in there teens running the place and they were all very friendly and knew what they were doing.

I ordered the menudo to go. The flavor was not bad, however I couldn’t find a whole piece of trip in the entire bowl of soup. It is more like ground menudo in the soup. Their online menu says award winning menudo. Nothing could be further from the truth. I would buy at another resturant. The kid behind the counter could not answer any questions I had without assistance. I’ll attribute his lack of knowledge to inexperience.

I love the way the place was operating. (coming from a business owner) The employees were very friendly, they all had a pep in their step at dinner rush and their communication amongst eachother as well as with customers was top notch. I got the carne asada fries, they were good but I would suggest requesting them smothered. That would have been even more delicious! My boyfriend had beef tacos, he said they were good and that they have a unique flavor. We all know, unique is a plus especially serving mexican food in a town like Pueblo. Keep up the good work guy!

The waitress busy talking to what seemed to be a friend through drive thru while I waited inside to place order. My order was a take out order. Breakfast burrito was bland no seasoning. The sausage reminded me of the “fresh pet dog food “which I feed my dog. Did not have any taste. The texture was soft and wet. Never going back. Although the inside of the restaurant looked inviting and nice. Disappointed.

In the heart of Pueblo, nestled humbly along HWY 50 and Baltimore, lies a culinary gem that defies its modest exterior. Taco Stop is not merely a restaurant—it is a sanctuary of flavor, hospitality, and cultural pride. A place where the food transcends street food and becomes an experience worthy of pilgrimage.
From the moment one steps inside, the atmosphere hums with warmth and efficiency. The staff, attentive yet unpretentious, greet each guest with genuine smiles and a rhythm that speaks of seasoned teamwork. Orders are taken with care, not haste. Questions are welcomed, not brushed aside. It is service that honors the diner’s time and palate.
The menu, while rooted in tradition, sings with bold execution. Each Item arrives as a handcrafted tribute to balance—tender meats kissed by flame, vibrant salsas layered with nuance, and tortillas that cradle the ensemble like a well-worn glove. The carnitas are a revelation: crisp edges yielding to succulent depth, while the barbacoa whispers of slow-cooked devotion. Even the humble taco is elevated to a textural triumph.
Presentation is thoughtful without being fussy. food arrives with color and clarity, inviting the eye before the first bite. And the flavors? They linger. They converse. They demand reflection.
What sets this location apart is not just the food—it is the soul. The HWY 50 Taco Stop is a testament to what happens when pride, passion, and professionalism converge. In a world of rushed meals and indifferent service, this establishment stands tall as a beacon of consistency and care.
Verdict: A must-visit for taco aficionados and culinary seekers alike. Worth the detour, worth the devotion, and absolutely worthy of this review.

Price was reasonable. Food was cold. Ordered a burrito and huevos rancheros. They should put some microwaves on the table for those that want to heat up their food. The only 2 good things were their apple empanadas (super warm) and coffee..super hot… (not sure why they couldn’t manage to get their food that way (warm/hot)… …overall..good for a stop of coffee and empanadas.
