This, in my opinion, is the best sushi restaurant in Seattle. Everything single dish, every single sushi, was perfect. It was clear how much details they put in, to making this an excellent culinary experience.
From the texture of the sushi, the flavor of the fish, the sushi rice, the amount of seasoning and wasabi; the chefs played various combinations that really harmonized and highlighted each ingredients.
We got the Omakasei with pairings. It was so good that even though we were full, we added 2 additionals sushi at the end of the night.
I regret not trying this place sooner.
That said, I think a few adjustments in the kitchen are needed to take this place to the next level, especially to justify the $200 price point. I consistently noticed some inconsistency in the seasoning of the kitchen dishes throughout my visits. Additionally, the sushi was often prepared in batches, which caused the rice to cool down too much before it reached the plate – sometimes sitting out for several minutes while the chef chatted with guests. Consequently, the neta and shari were not always served at the optimal temperature to fully maximize the flavor.
I also felt the toppings were often overpowering, often masking the delicate flavor of the fish.
Ultimately, a number of pieces were a ‘miss’ due to temperature, aging, balance, or cook time. At a fine dining omakase like Suzuki, I would expect a much higher ‘hit’ rate.
It’s a nice restaurant with great service, but with tighter focus in the food itself, it would be top-tier.
Our omakase experience at Suzuki was absolutely incredible. Of course, the food was amazing, but what made it truly special was the entire experience, from the service to the atmosphere.
Everyone who served us, including the chefs, was so kind, warm, and genuinely happy to be there. You could really feel the positive energy and strong bond among the staff, which made the whole dining experience even more enjoyable.
Each dish was beautifully presented and came with thoughtful explanations, adding so much depth to the meal. It was a feast not just for the taste buds, but also for the eyes and ears. The ambiance was simply perfect.
Without a doubt, it was the best birthday dinner I’ve ever had.

There were 20 courses in total. Most of the ingredients are sourced from Japan directly. I kind of hoped that they would utilize some more local produce and seafood. Nonetheless, each dish was a hit and brought nothing but amazement.
What’s more Chef Suzuki is a very engaging person. The interaction with him and the staff is what truly makes this place stand out from the other omakase places in Seattle so far.
Highly recommend, will be coming back during a new season to try new fish and dishes.
