This eatery from Chefs/owners Phillip Frankland Lee and Margarita Kallas-Lee is no ordinary omakase spot. The nigiri are not just supremely finessed but also infused with original touches—like the dab of sweet corn “pudding” and sourdough breadcrumbs that coat slices of hamachi. Even traditional pairings become transcendent with his house-fermented soy sauce. The iconoclastic vibe extends to the beverages, including cocktails, sake, and beer. Despite such originality, this bar does indeed adhere strictly to one tradition: a mini counter with seating for just ten to ensure a deeply personalized experience. Your time here is bound to pass in a blissful haze of convivial chatter. – The Michelin Guide

I had lots of questions about the process, how things are traditionally done, the point of the fan and even the explanation about the wasabi and the music playing. It was just fantastic. We actually got sad when we realized how far we were in the experience and that it was almost over.
10/10 – would recommend.
Sundays and Mondays are the best days to go!
If you love sushi, even if you just like it, do yourself a favor and book this for yourself!
Yes, I love high-end sushi as you know from my other reviews and I absolutely give Sushi by Scratch my enthusiastic endorsement – great food, fun experience and unique. It’s a small number of people seated with you and everything is tailored to a nice, intimate experience with your staff while enjoying very high quality sushi. So many courses, so much attention to detail in careful presentation with lots of flavor compliments to enhance each bite!
As for the cost? If you just get the dining experience and water, you’ll still have a good time but I say splurge a bit – get some cocktails or a pairing flight, pop for the extra courses at the end – have some fun! It’s sushi done splendidly!
Tell the GM, Beau Taylor, that Tait says hello 🙂
Everything I had was very fresh and tasty.
Service was impeccable and I absolutely loved the speakeasy vibe.
Bartender made a fantastic drink too.
It is not a cheap place but is definitely worth the $!!
very much a speakeasy for great sushi .. is on the upper floor of a hotel and it feels like you’re walking into a hotel room. You’re greeted in the front and guided to the back where the sushi chef prepares their daily menu quality was of course amazing.!
Service was also great !
It’s Omakase but you can add on à la Cart at the end.
I don’t drink so food alone it was a little over $300 by myself .. it was definitely an experience but you can probably find the same quality sushi at a slightly lower cost
Sushi was absolutely excellent and a stand out amongst sushi restaurants in the United States.
The sushi here is nothing short of phenomenal. The fish, flown in daily, is as fresh as it gets, ensuring every bite is an explosion of flavor. Texas may not be known for sushi, but this spot will make you rethink that entirely.
Whether you’re planning a romantic date night or hosting a team dinner, Sushi by Scratch is the perfect choice. The sake selection is impressive and thoughtfully curated, complementing the meal beautifully. And the staff? They’re incredibly kind, attentive, and passionate about delivering an unforgettable dining experience.
A word of advice: reservations are a must. Their limited hours and exclusive vibe mean tables fill up quickly. This isn’t just a meal—it’s an experience you won’t want to miss.
