Aloha and Konnichiwa! Sushi Blue Wave has been awarded Best of Kauai 2025. The owner, Teddy Hidetoshi Seike, is originally from Fukuoka, Japan. He moved to the U.S. in 2017 and went on to operate four sushi and ramen restaurants in California. Captivated by the people, climate, and culture of Kauai, he decided to open Sushi Blue Wave. At Blue Wave, we offer a unique selection of dry-aged fish that you won’t find anywhere else. The head chef is Koji Miyamoto, a Michelin-recommended Japanese chef. All of the employees are incredibly kind and knowledgeable. We were lucky enough to sit at the sushi bar two nights during our trip, and it was fascinating to watch. They’re true artists, every single one of them.
I’d recommend:

• Spicy Tuna Crispy Rice with Jalapeño
• Kubota Senju (small)
• Chef’s Choice
• Blue Wave Crunch Roll
• Dry-Aged Wasabi Truffle Salmon
• Lemon Bliss Roll
But honestly, you cannot go wrong with anything on the menu. Their sake selection is excellent as well—just ask your server for a recommendation that pairs with the fish you’re ordering.
My personal favorite was the Dry-Aged Wasabi Truffle Salmon. It’s the best thing I’ve ever eaten in my life.

We were welcomed warmly. I’m always hesitant to try any non-traditional sushi, but everything we ordered tasted well balanced with clear thought and care in flavors and preparation.
Something I’ll probably never taste again unless I visit was the octopus karaage, which was unique and flavorful with fun textures. Recommended.
From start to finish, everything was top-notch. The quality of the fish was exceptional!
Our server, Melyssa, made the experience even better. She was warm, attentive, and so knowledgeable about the menu. Her timing was perfect, and her recommendations were spot-on! The food came out super fast, and every single cut was pristine – some of the freshest, most flavorful sushi we’ve ever had.

We literally just walked out of this restaurant, and I’m still in shock. I almost felt dizzy from how good the food was.
We’ve been to many Michelin-starred restaurants around the world – and honestly, none of them compare to these sushi. The quality, the freshness, the balance of flavors… it was unreal.
Every bite was perfection. Pure craftsmanship. No unnecessary show – just insanely good sushi done at the highest level.

I’m not a sushi eater, so definitely don’t know what is what or the names, fortunately for me and my husband we went with my BIL who is a foodie and had eaten there before, EVERYTHING we tried was out of this world, so delicious. I personally loved their miso ramen, and a tasty eggplant with bonito flakes on it. The owner Teddy came by and had a drink with us, he’s so personable and also love Sy. We had an amazing time there. Will go back for sure.
