a new sushi counter designed for quiet focus.
The space, centered around light wood,
is simple and open, without blocking the line of sight.
From across the counter, each individual movement naturally comes into view,
the chef’s calm presence gently softening the atmosphere.
The nigiri is rooted in Edomae tradition,
respecting classic forms while carefully applying searing and warming
to draw out the umami of each ingredient.
Neatly refined knife work,
and a sense of thickness felt the moment the neta reaches the mouth.
The uni is served gently wrapped,
its appearance reminiscent of Princess Kaguya,
leaving an impression on both the eye and the palate.
The chef’s dedication and thoughtful care
are felt in every single piece.
A sushi experience shaped by
a gentle rhythm of refined small dishes.
Beginning with kegani crab in matsutake sauce,
followed by simmered octopus,
abalone risotto, and a warm dish of kinki.
Each course layers umami,
yet the flow remains light and balanced.
Midway through, a special noodle dish appears,
finished with caviar and truffle.
Its texture is uniquely chewy,
and with each bite,
both presence and aroma slowly unfold.
Grilled eel deepens the lingering impression,
before the course concludes with matcha,
whisked by hand
Its subtle sweetness quietly resets the palate,
bringing the meal to a graceful close.
A moment to experience
Japanese food culture through all five senses.
From the moment you walk in you are welcomed into a beautifully designed traditional Japanese style space that feels calm intimate and refined. The atmosphere immediately sets the tone for a great experience.
The opening course set the direction for the entire meal. Everything that followed felt carefully planned and perfectly paced. Each course was explained clearly which added a lot to the experience without ever feeling distracting. You can tell there is a high level of craftsmanship behind every bite.
I highly recommend choosing the alcohol pairing. It is not limited to sake but includes a range of different alcohols selected specifically to match each course. Some of the pairings really surprised me and elevated the sushi in ways I did not expect.
If you are looking for a sushi experience you will remember and want to come back to, Sushi AKA is absolutely worth it.
The calm counter-focused space feels special without being overly formal, making it ideal for dates or anniversaries. The omakase course flows smoothly, with highlights including rich snow crab with crab miso, a comparison of Murasaki and Bafun uni, tender simmered octopus, and abalone with liver sauce followed by a memorable liver risotto.
Nigiri such as Shiogama toro, sumi-ika with sudachi salt, and charcoal-seared nodoguro stood out, and the course remained engaging through to the final ohagi-style sushi.
The sake selection is extensive, with thoughtful recommendations that pair well with the delicate flavors of the food, even for those new to sake.
A well-balanced omakase in a serene setting—perfect for a special yet unpretentious sushi dinner.
The cold truffle noodle was amazing — unique and full of flavor. The sushi quality was excellent, especially the unagi, which was incredibly soft and delicious.
Highly recommend. I would definitely come back!
Each course is crafted with the chef’s meticulous attention to detail, ensuring a worry-free dining experience
Beyond sushi,
delights like hairy crab with matsutake mushroom sauce, abalone risotto, simmered red snapper,
caviar cappellini, and grilled eel are among the superb Japanese dishes on offer ✨
The final matcha tea is especially popular with international guests The head chef personally teaches everyone how to whisk matcha, and we all get to whisk away‼︎
If you struggle, the chef will kindly re-whisk it for you, so relax❣️
Needless to say, the sushi ingredients are all top-tier quality✨
Watching them grill over charcoal right before your eyes lets you savor the lingering aroma
Exclusive dishes like hairy crab × matsutake mushrooms or sea urchin × caviar × truffle are only available here
With an extensive sake selection including hard-to-find bottles and pairing suggestions, you can happily leave the choices to the experts
As seating is counter-only, early reservations are recommended.
Experience wonderful Japanese culture while casually enjoying the finest sushi
Craftsmanship in Every Bite in the Heart of Shinjuku
Sushi AKA Tokyo
Located in a quiet corner of Shinjuku 5-chome, this newly opened sushi restaurant features a beautiful white-wood counter and a clean, elegant atmosphere.
While still new, the service already feels warm, attentive, and refined.
⸻
◆ Appetizers (Otsumami)
From the very beginning, the course is designed to impress both visually and aromatically.
● Snow Crab × Matsutake Broth
A deeply aromatic matsutake broth paired with rich seasonal crab—an elegant start that highlights the flavors of autumn.
● Simmered Clam (Hamago)
Plump, tender, and full of umami with every bite.
● Abalone Risotto
A luxurious small bowl infused with dashi—comforting yet refined.
● Simmered Kinki Fish
Beautifully fatty and exceptionally juicy.
● Japanese Sommelier-Style Noodles (Truffle × Caviar)
A luxurious layering of aroma and flavor—one of the highlights of the appetizer portion.
● Grilled Unagi
Charcoal-grilled for an aromatic finish; mountain pepper and wasabi offer enjoyable twists.
A well-paced series of dishes that celebrates both seasonality and premium ingredients.
⸻
◆ Nigiri Sushi
The red vinegar shari is slightly firm, giving each piece a clear structure and allowing the fish to shine.
Visually stunning nigiri continues one after another.
● Cuttlefish
Fine knife cuts bring out its natural sweetness.
● Kasugo Sea Bream
Gentle acidity and fragrant skin—delicate and balanced.
● Nodoguro Kombu-Cured
Rich fat meets deep umami from the kelp.
● Maguro Progression (Akami → Chūtoro → Seared Ōtoro)
A thoughtful flow highlighting differences in aroma, fat, and temperature.
● Botan Shrimp
Creamy, sweet, and excellent quality.
● Uni
Served generously “on top” rather than as a gunkan roll—rich and luscious.
⸻
◆ Wagyu × Uni × Caviar
A visually striking dish.
Smoky seared wagyu topped with uni and caviar creates a decadent combination.
Serves as a memorable highlight in the middle of the course.
⸻
◆ Rolls (Makimono)
Even the final rolls show impressive precision.
● Chopped Negitoro-style Bite
Finely worked knife skills that pack flavor into a single bite.
● Tekkamaki (Regular & Half-Cut)
Light, clean, and well-balanced with the red vinegar shari—easy to enjoy even at the end of the course.
⸻
◆ Soup, Dessert & Matcha
● Miso Soup
Comforting and soothing.
● Seasonal Fruits (Strawberries, Shine Muscat, etc.)
Refreshing, simple sweetness.
● Matcha
A rare finish for an omakase—hand-whisked matcha that adds a beautiful lingering aroma.
⸻
◆ Service & Pacing
While the dishes are crafted with great care,
the overall pacing is on the slower side, making the course feel slightly long.
However, as a new restaurant, refinement in this area seems very likely moving forward.
⸻
◆ Overall Rating|4.4
• Excellent variety in appetizers
• Beautiful and high-quality nigiri
• Engaging charcoal-grill presentation
• Luxurious combinations such as Wagyu × Uni × Caviar
A highly promising new sushi destination in Shinjuku.
Once the service pacing is polished, this restaurant has the potential to become even more exceptional.
Everything was genuinely delicious. The cosy ambience made the experience even better. Definitely worth a visit!!
The dishes are very nice and also the sushi selections.
Felt like the wine pairing was a bit random with the dish but still okay.
Only thing I would say is that for a very expensive experience you do not want to see them weighing the drinks. They could do this in the back, is a bit funny to see them being so worried with the weigh of each glass.
Still great service and food!
The menu had a nice array of dishes. Order was arranged quite nicely, no flavour fatigue whatsoever. Menu had a good variety of familiar dishes— all executed exceptionally! Especially the cook on the octopus and abalone!!
Also a couple of different takes: dishes being served in a style different than what i usually see (warm vs cold, or nigiri vs handroll) which I appreciated and was a nice surprise. I would say the flavours would be liked by a broad audience: nothing outlandish.
Great job!
