The yum yum sauce, instead of being served fresh at the table like most hibachi restaurants was stored in empty Sriracha bottles on the table that were melting from heat exposure. Look it up guys that stuff is supposed to stay refrigerated! You are cultivating a foodborne illness. That alone made me uneasy but I grabted the benefit of the doubt because we were hungry and my kids were already restless. In my experience, if they’re doing it in front of house then it’s worse in back of house.
The bathrooms were visually a nightmare but smelled okay which thank God. Our server checked out 10 minutes into our meal. I could see her at the sushi bar on her phone while our drinks were empty and we needed stuff. Random other servers started coming to our table. She showed up for the payment though! We also had to remind the chef about our add ons because the server clearly didn’t pass on the information.
Our hibachi chef was untrained and steamed all our steak instead of searing it so it was chewy and tasted only like black pepper. She also had to ask me if our med rare steak looked done. Dude… you are a professional chef. She was cooking in front of us for 50 freaking minutes. Not exaggerating. We watched tables that sat 15 minutes after us get up and leave while our food was still on the grill. By the time we got our protein, everything else had long been cold. She was clumsy and had to pick egg shells out of most of the eggs she cracked, the fried rice was overcooked, and everything was generally bland. She completely screwed up the choo choo train. There was also zero showmanship or skill displayed, which everyone knows that’s the the main reason you are accepting that price point, for some entertainment and atmosphere. She was very pleasant and personable which we appreciated, but management clearly did not set her up for success. She was not confident and had not practiced enough to feel comfortable in a routine or showed any skill or precision with her instruments. Also I guess someone told her the grill was still too hot when she finished so she brought out a 1/2 pan full of water to cool it off… while we were still sitting at the table! The steam went all in our faces and my children were coughing and the water was splashing on us because it was boiling instantly and we got a little wet. Then after that was done, she brought another pan and did it again! I wasn’t even mad at this point. I was side eyeing my wife giggling like what’s gonna happen next!? Girl I like you but you have to practice and you have to learn how to do some difficult things when people expect to see a real hibachi chef. If your superiors put you out there before you are ready then this is what happens. You don’t train your kitchen staff on customers. You train them on you so that God forbid you actually maintain some quality standard!
I still tipped 20 percent bc I’m not a monster and I’ve done my time in food service but I won’t be returning to this place, ever. We only budget a meal like this every quarter and sumo ruined it. I blame management.
