Absolutely unforgettable experience at Stubborn Seed! From start to finish this Michelin-star level tasting menu was elevated, creative, and incredibly delicious — every course felt like a work of art. The flavors were bold yet perfectly balanced, and the presentation was stunning. Service was polished, attentive, and warm without ever feeling rushed. The ambiance is chic and intimate, making it ideal for special occasions or a date night.
If you’re visiting Las Vegas and want a world-class meal that doesn’t feel pretentious but still delivers on every level — this is it. Worth every penny and absolutely recommend the tasting menu — you won’t forget it! ✨
Jeremy Ford, Top Chef winner, opened the Las Vegas location of Stubborn Seed, building on the success of the original Miami restaurant, which holds a Michelin star. With Michelin returning to Las Vegas, it feels like only a matter of time before this location earns one as well.
Choosing a restaurant for a special occasion in Las Vegas can feel overwhelming. The options are endless and the standards are high. After doing my due diligence, I reserved a table for two at Stubborn Seed because the cuisine looked modern, creative, and thoughtfully composed. I mentioned that we were celebrating my wife’s birthday, and they absolutely delivered. She was treated like royalty from the moment we arrived.
As locals, we were told we received complimentary valet and a discount, which was an unexpected and appreciated touch. Had I known. I wouldn’t have parked at self-parking located in another zip code.
From personalized menus to polished, intuitive service, the entire experience felt elevated without feeling stiff. I even told her we should return for my birthday, although November suddenly seems far away.
We chose the tasting menu with wine pairings. From the moment our server, Cole, introduced himself to when Josh, the sommelier, stopped by, the service felt Michelin level. During our conversation, Josh mentioned it was also the one year anniversary of Stubborn Seed Las Vegas.
Serendipitous.
The yellowtail, lamb dumpling dish, barramundi in galangal curry, wagyu strip loin, and citrus pavlova were all exceptional. Each course felt precise and intentional. And as an Asian dude, I learned that you can do so much more with pine nuts from Stubborn Seed’s dishes!
The wine pairing added another layer of discovery. A dry Riesling was a standout, and pairing Pinot Noir with white fish completely reshaped how I think about seafood and red wine.
In many ways, the restaurant’s name mirrors the chef’s own resilience. His perseverance and skill have allowed something planted in Miami to flourish in Las Vegas. We will absolutely be back.
I enjoyed every dish in the tasting menu. It was hard to pick my favorite bite. The wine pairing was equally excellent. The restaurant is beautiful and service is very attentive. I would definitely come back to see what the chef has come up with.
We loved it enough our first night on the tasting menu that we came back again to explore the à la carte options, which says everything. The cooking here is thoughtful and self-assured. Dishes are creative without being chaotic, imaginative without trying to steal the spotlight from themselves. Each component feels deliberate, executed with precision, and assembled in a way that lets the concept fully land instead of getting lost in excess.
The service is impeccable both at the bar and in the dining room.
Stubborn Seed Las Vegas is an extension of the original Michelin award winning Miami restaurant, which I haven’t yet visited, but this experience alone speaks volumes. Pulling off this level of execution, consistency, and restraint in an offshoot location is no small task. If anything, it signals a deeply rooted philosophy and kitchen culture behind the Chef Jeremy Ford’s brand.
Stubborn Seed is a must-visit, and one that effortlessly earns a repeat reservation.
