Stillwell’s – Dallas – a MICHELIN Guide Restaurant

It’s nestled inside the Hôtel Swexan, a tongue-in-cheek play on Swiss hospitality meets Texas, but there’s no mistaking the roots of this upscale steakhouse.

First time dining here. Everything was delicious and service was very good as well. Will definitely put it on our rotation of our usual restaurants.
We shared the petite cold tower, the dumplings, wedge, and really enjoyed the caviar service. It was served in its original tin and not in a bowl (like some places do, I always frown upon that). The chablis was delicious and my husband enjoyed the side car cocktail.
This restaurant is great for special celebrations as well as dinner out with friends or family.
I highly recommend it.

With a background of over 9 years in the restaurant industry I love visiting the top rated places in Dallas and this place deserves more “hype”. I ordered the 22oz Cowboy Ribeye, along with the mac & cheese, truffle parm fries, and an incredible glass of wine & strawberry cheesecake for my 24th birthday. It was just amazing. The moment you pull into the Swexan, the luxury experience begins! The valet was seamless and so sociable, we were navigated towards the elevators where staff member take you directly to the host stand up on the restaurants floor. The whole layout is so cool, with different rooms with different vibes. Our server was so cool, she was so personable, helpful, and funny! I love the uniforms too! That, mixed with the staff’s tattoos, is the most professional, edgy, attractive look. I am a huge fan.

Right to the good stuff, the quality of the steak is just unbeatable. If you didn’t know, the Harwood Hospitality Group has its own ranch in Texas with their own cows… that are brought up, for their restaurants. That is one of the many reasons I love Texas and I love Stillwell’s.

I know a good steak. I lived in Florence Italy for 4 months, where they are known for their Florentine Steak. This steak is hands down the best steak I have ever had, and I have 24 years of evidence to back that! I cannot wait to come back!

Stillwell delivers a truly elevated dining experience. Brittany and Nicholas were exceptional, polished, attentive, and deeply knowledgeable, guiding us through the menu with care and confidence.

Every dish was thoughtfully executed, from the pull-apart bread and beef dumplings to the steak and lobster tail. The cinnamon roll with ice cream was a standout, both inventive and memorable, especially with the story behind it. A visit from the general manager added a personal touch that doesn’t go unnoticed.

A Michelin star well earned. Service, hospitality, and execution at the highest level.

Amazing birthday experience! Love trying new steakhouses around Dallas, and this was definitely a spot for the books. David had welcomed us and made a couple suggestions which we decided to go with. The Beef dumplings were delicious, as well as the steak tartare. The lobster bisque was one of the best I’ve ever had with Sous vide lobster tail, and butter brioche. Will be coming back asap to try some more wine and give the bar a thorough tasting as well. Thanks to David, the team, and the chefs for making it a great experience!

This is a Michelin-star level steakhouse experience and it was genuinely excellent. I ordered the filet mignon along with Brussels sprouts and mac & cheese, and everything was absolutely delicious. The filet mignon was perfectly cooked, extremely tender, and very filling on its own.

One mistake I made was ordering two sides — honestly, one side is more than enough because the steak portion is quite satisfying. Also, they serve a loaf of hot bread as soon as you’re seated, and it’s out of this world. Between the bread, steak, and sides, the meal becomes very hearty.

Overall, the food quality and overall dining experience were top-notch. I would definitely love to visit again.

We sat in the bar instead of the main dining room and I’m so glad we did. Better energy, more vibe, more fun.

They start you off right — champagne in the hotel before you even head up to the 7th floor. Nice touch.

Highlights:
• Old Fashioned – strong, balanced, no nonsense.
• Dumplings – good but steak tartare for the win.
• Caviar- yes!!!
• Delmonico steaks – cooked perfectly. Add-ons are worth it: truffle butter (absolutely), blue cheese, and the voodoo peppercorn (great kick, a little spicy but in a good way).
• Lobster bisque – tons of lobster, thinner broth, flavorful. One of our guests said it was the best they’ve had if you’re looking for the amount of lobster.
• Creamed corn + lobster mac – crowd favorites.

The blue cheese salad was a sleeper hit — thinly layered so you’re not sawing through a brick of lettuce. Small detail, big win.

Desserts were next level: • Cheesecake with baked apple cobbler topping (I heard “best ever” from my dining partners… and no they wouldn’t even share they liked so much). He said if you only come here for the cheesecake, you’ll be happy.
• Peanut bar — fantastic!!!
• Key lime pie — bright and a perfect surprise finish.

And our waiter, Carlos? Elite. Attentive without hovering, knowledgeable, and somehow appeared the second you needed something. It was like if you thought it, he knew it. Excellent. The whole team checked in — seamless service all night.

Fun, fabulous food, great vibe. Highly recommend — and sit in the bar. And, apparently get the cheesecake too.

Overall, a very solid steakhouse, but for the price would have expected slightly better service, presentation, and attention to detail.

The steak was rare, instead of medium rare, but the salad was excellent and the lobster bisque was great and presented very nicely. I really enjoyed the bread as well, the sides were just fine.

The dessert portions were absolutely ridiculous! Not my favorite cheesecake or chocolate cake, so I think there’s room for improvement there.

Walking in felt like stepping into J.R. and Bobby Ewing’s private dining room. The décor is dark and moody yet grand and opulent. The bar area is separate from the formal dining room, where we were seated beside a massive, central fireplace with cowboy hats lining the walls. The vibe is pure upscale Texas cattle-ranch luxury.

From the place settings to the linen tablecloths and napkins to the tuxedoed service, everything felt intentional and impeccably curated. Service was formal in the best way–they even served from the proper side each time. The attention to detail was next-level, down to removing the seeds from the lemon slices.

This is truly a meat lover’s paradise. No part of the cow goes to waste. Portions are generous, and even ordering only appetizers felt like a full four-course meal. The crab bake was a huge mound of fresh, buttery crab–absolutely delicious. The pork belly over grits was an excellent pairing; the grits were fluffy, creamy, and melted on the plate, while the pork belly was rich and flavorful. The bone marrow dish missed the mark for me–it arrived as a bone filled with shredded beef mixed with marrow and topped with scrambled eggs, but I was hoping for traditional marrow and bread.

And the bread–fluffy, soft, and paired with incredible butter. Pace yourself. The true standout was the beef dumplings. The gravy was so good I shamelessly used the bread to soak up every last drop and nearly licked the bowl.

Tomas took exceptional care of us. I stepped away for what turned into an impromptu restroom photo shoot and returned to find him waiting patiently at my seat (!!), my napkin perfectly refolded and placed back in my lap once I sat. That level of service says everything. The night ended perfectly with a decadent, moist chocolate cake for my daughter’s birthday. When the check arrived, we were treated to chocolate-caramel candies that actually contain bone marrow–proof that no part of the cow goes to waste.

We loved the experience and can’t wait to return.
