We created Spark out of the idea that BBQ is one of those casual, no-fuss foods that brings people together–just like beer does. It’s a backyard food, where friends gather round and dig in and there’s good conversation and cold beer, and it’s all satisfying and good for the soul.

Fantastic food! The meats are juicy and flavorful and the sides pair perfectly. The Two-Two plate is a great way in to Spark’s world. The loaded items are to die for; the Gouda cheese sauce is the best cheese sauce I’ve ever had. The service was excellent and I had a great conversation with one of the cooks. There’s so much to love about this operation, and when you pair the food with the beer and atmosphere of the Bristol Pub there’s an undeniable sense of community that warms the heart. Absolutely recommended!

Not sure what happened here, brisket was very subpar and weird, like a gray blob of meat, no flavor. Nothing resembling smoked in flavor or appearance. Ribs weren’t bad, but definitely flavorless. Mac and cheese were average at best, fries were decent. Great beer. Everything was decently presented and service was quick, but just missed the mark.

I ate at Spark BBQ just yesterday and it easily stands out as the best BBQ in Colorado Springs. Everything was cooked perfectly, packed with flavor, and you can tell real care goes into the food. The experience was smooth, welcoming, and worth every minute, and I’ll absolutely be back. If you’re in the Springs and like BBQ, this spot is a must.

Spark BBQ was hands down the worst BBQ I have ever had. Nothing tasted smoked at all. Everything came across more like baked meat with an overwhelming amount of black pepper dumped on it. The brisket tasted more like a dry roast than BBQ, and the flavor was completely off.
To make it worse, when I asked to substitute the chicken for brisket or pulled pork, the cook in the back mocked me by singing “we have a comedian” the whole time he prepared my order. It was unprofessional and left a terrible impression. Thanks for singing such a stupid comment that we won’t be back but that’s ok you don’t need customers with that attitude. You made my wife’s birthday so awesome that she walked off and said let’s leave but I unfortunately had already paid.
If you want real smoked BBQ with authentic flavor and decent service, this is not the place. If you want over priced roasted meat then here you go.

The worst barbecue I think I have ever had. The Mac and cheese was cold , small portion of tasteless pulled pork, and the chicken was spoiled. Drink the beer and eat at one of the other places. These guys have got to do better than this.

Amazing food, great service and chill atmosphere. This is inside of an old school so it’s a little bit weird/hard to find, but the food is amazing and prices aren’t too bad. Food came out relatively quickly and tasted great.

Service non-existent today (Sunday Sept 21). The one guy was so annoyed to be here and to serve anyone. Food is reheated junk. Fries is the only decent thing. 38$ badly spent. Would love to see this business succeed but it’s so clear where it’s heading.
