I can’t say enough great things about this place. We had Christmas Eve dinner here tonight and it was absolutely spectacular. Not only the service, but the food itself was phenomenal. I consider myself a scallop snob, and these were the best I’ve ever had! Delicious mocktails and dessert too! The chef outdid herself

It’s a small and cozy place. I was going to give it 5 stars because the vegan soup, bread, pan seared scallops & double date saffron skewers tapas were so delicious, and our waitress was very nice. But I have to remove a star because the mushroom raviolis were way too salty [the other main courses were fine] & the bench seat was a bit uncomfortable.

Excellent! What a surprise! The exterior & location gave us a little pause but we had an incredible meal. Great cocktails & wine collection, all reasonably priced. Vegan potato leek soup had a hint of coconut milk, light & delicious. Salmon & capicola date apps, smoked prime rib, mushroom ravioli, simple roasted veg were my favorites. Service was knowledgeable but also supported by owners onsite & made for a personal experience and I loved the intimate atmosphere. We’ve come to WP for nearly two decades & this was one of our best meals yet. We will be back—Bravo!!

Absolutely wonderful experience. Nice atmosphere, good waitstaff, and the food was amazing. Everything was presented beautifully, and the tastes were fresh and flavorful. Hands down, the best steak we’ve eaten in a restaurant.

Solstice has ruined every other restaurant for us in this part of Colorado. We’d eat here all the days of our trip if they were open.

Solstice Bistro absolutely blew me away. The food was fantastic. Beautifully prepared, full of flavor, and clearly crafted with real care. But what really made the night exceptional was the service. The server was outstanding: warm, attentive, and incredibly knowledgeable. Even dining alone, I felt completely welcomed and looked after. Highly, highly recommended!

Omg this place hits the spot!!! I brought my girlfriend here one night after we hadn’t been out in a while, to celebrate our anniversary, and we were not disappointed!! We shared the petit filet and Hokkaido scallops, tenderloin tip stroganoff, wild mushroom ravioli, and a house salad. I can’t say enough about the quality atmosphere, service and of course the delicious cuisine!! We will definitely not be waiting until next year for our next visit… see you soon!!

A wonderful dining experience, started with the seared scallops and capicola with dates. We opted for the special (filet mignon), ribeye, and bison short rib. They served us a tasty gluten-free, vegan mushroom soup ahead of our meal. For dessert, we enjoyed caramel cheesecake and fantastic flour-less chocolate cake served with blueberries and whipped cream. We also tried their Mountain Manhattan, gin&tonic, and lemon-lavender mock-tini.

Surprisingly awesome restaurant in Fraser. Everything was incredible from the craft cocktails and tapas and the main courses. Our party of four chose 4 different entrees and they were all delicious! Austin provided excellent service. Booked a return reservation before we left!

Best place for a nice dinner in the entire area. Incredibly cozy and nice inside. We had the carpaccio to start which was delicious and the smoked prime rib and smoked salmon. Absolutely phenomenal. Service was swift and accommodating for my inability to pick a drink, made one up for me based on what I was wanting. Both the owner and wait staff were very welcoming and kind. Definitely try this place out!
