Beans were end of day, and dry but man were they good, excellent rich stewed flavor!
I think the cornbread could have used a little more salt tho, my only complaint.
I’m New England born and raised, not very picky, especially when it comes to barbecue as it’s not exactly a perfected thing in New England and I don’t have extensive experience eating the best of the best. I was extremely hungry and so badly wanted to like this place! I waited a long time in a very cold long line. But sadly was disappointed.
This place Has the potential to be good but they need to learn how to implement flavor. The meat was pull apart tender but Smoke should not the only flavor, sadly their flavor department is lacking. Where’s the rub????
This was not the only thing that was flavorless . The beans tasted like they only had brown sugar and not very much either. No onion or herbs or spice profiles at all. But they had fantastic texture.
As did the meat on the brisket. However, the same cannot be said for the briskets fat. It should never be smoked completely covered the whole time. I watched meat get pulled from the smoker and realized when I got my own food that there was no bark and the fat on the brisket never rendered. It was gelatinous jiggly and slimy. Brisket should never have slimy or jiggly fat, and often times if cooked properly can be the best part of brisket. The fat from brisket should melt in your mouth and be a hydrating factor for the brisket.
Sadly the sauces were the same, flavorless and lacking much needed flavor profiles and fell flat pretty hard. A mustard Carolina sauce should not just taste like mustard. It is still a barbecue sauce and should not be like eating yellow mustard alone. There was zero sweetness in all of their sauces and had all the parts of sauces that you don’t really care about and lacked the special parts that you love, and what sets sauces apart from one another. A basic and nothing special base for a sauce. The mild barbecue sauce was so tomato forward that it was like eating a pasta sauce with a hint of barbecue. I was not at all impressed I was not at all impressed I will never be back unless they advertise that their trying new recipes.
The prices were pretty high which is to be expected when it comes to barbecue but that’s typically for the good places, if you’re going to fall as hard on flavor you should probably lower your prices! Was not worth my time and not worth my money! I’m actually pretty upset that I wasted so much time waiting for something that tasted so bland! And what’s sad is that I’m a New England girl and I’m not a hardcore southerner who is picky about bbq. So that should tell you just how hard they fell flat on flavor. However my fiance is and has taught me how to pull off the best southern eats. I hope they learn how to get it right because I frequent this area often and would love some good barbecue!
Owners,
I hope you grow as a company and learn new techniques because you’re an adorable independent business and I want to see you strive! But you need to be willing to learn and take critiques as opportunity to grow instead of taking it as an insult.
I invite you to contact me, I will come there free of charge and help you to build new recipes and impart flavors with southern cooking techniques that I’ve learned through my 25 years with a southern partner. Good luck on your journey as business owners
Hopefully I’ll see you again when you put out signs letting us know you’ve got something new.
Got these ribs this evening, they were inedible. Bought full rack with two sides and a large smoked cashew. Nothing was to our satisfaction. The ribs were burnt and inedible, the corn had no flavor and tasted watery (frozen corn) and the Cole slaw tasted like it came from Sysco and the cashew had a very unpleasant finish to them.
I drove 20 minutes to return the ribs. The person working the window showed no remorse and said that most people like them cooked that way. I asked if she had any with less crust and was told no. I am amazed that the people working there think this is an acceptable dish to serve. Was given a partial refund, but still feel very unsatisfied by both the horrible food and the callous attitude of the staff. The truck refused to credit my card for the return and insisted on giving me cash, that is not how I wanted to be reimbursed but no cares from the server.
I am sure they will not miss my future business, but they should be ashamed to call themselves a BBQ joint serving such food and then trying to defend it. It’s unfortunate because I was told by many people on social media to go with the ribs. Believe me, I don’t have a problem letting them all know about my bad experience.
We got the Shredded Pork, Shredded chicken, Brisket and Half chicken. The brisket was dry almost like beef Jerky. The best Tasting and moist meat was the half chicken. We felt as if the meals together wasnt worth the $48 dollars spent.
