We didn’t even intend to stop for lunch, but I’m so glad we did. I had the pork belly burnt ends and mac’n’cheese..wow!! Absolutely fantastic!! Best BBQ I’ve ever had was in Mesquite Texas, but I can tell you, this ranks up as a close second. I’ve eaten a lot of BBQ, so to be second on that list, is a big compliment. Absolutely recommend this food truck, and the hotdog guy next door. My husband had their burger & fries and loved it.

Got the brisket, burnt ends, Mac and cheese and beans. It was the best barbecue I’ve had in Oregon. No BS with fancy sides or experimentation, just perfect seasoning and tender meat the way a BBQ plate should be. The only competition is in Carolina.

Stopped at North Fork Station – Smoke Theory Food Truck earlier this evening as we were coming home from an afternoon on the mountain. This spot did not disappoint. Ordered the brisket – so tender it almost melts in your mouth. Some of the best I have had locally. Sides included tasty Mac and cheese and coleslaw! Cannot wait to go back!

The best bbq in Oregon! No place I have tried yet is even a close second. This bbq is that good! Every meat in our order was cooked, smoked, and flavored to perfection! Sides pretty good, mac and cheese was above pretty good. This food is 100% worth a drive. We will be back!

Super delicious BBQ! The pork burnt ends are pork pillow heaven! So yummy! The brisket was juicy, tender good!! BBQ sauce on point. Don’t pass this place up! Kyle is a barbeque master! He even gave us a taste of his chicken chili, which was very flavorful! Great service, great food at a great price! Smoke Theory BBQ gets the win for me!

Wow, wow, wow! These people know what they are doing. Such delicious smoked meats and sides. Staff was very friendly. Pork belly burnt ends were insanely good. Sides were yummy too. Plus it’s in a cute little food cart pod with covered seating and a bar if you want an adult beverage to go with your meal.

Tonight, I tried the pork ribs and again, I’m blown away by the flavor and quality of food at Smoke Theory BBQ!! People in the restaurant industry know the commitment it takes to be successful. Kyle and Beth take it to the next level as they serve this business, their neighbors, and travelers on the Santiam Highway.
Amazing!!! Traveling a lot of miles for work, I have too much experience with food trucks, but this one is now at the top of my list. Sad to say, I’ve driven by too often in a hurry and will now be planning future trips around this being the 1200 destination. The pork belly bites were better than any restaurant I’ve ever eaten them at. Melt in your mouth pulled-pork, great beans, and BBQ sauce that fills the bill. I highly recommend you put this on your list to visit as you go through the Santiam Canyon. Seating is a fair-weather event, but if it is dry, the tables are a nice break. (1/26 Tried the brisket today and now the addiction is complete!! Best place to stop in the canyon.)
