We ordered the Medium Old Fashioned Saimin with garnishes and Joe’s Saimin Delight with roast duck, wun tun, vegetables, and all the fixings. Both bowls were deeply satisfying—clear, flavorful broth, perfectly cooked noodles, and generous toppings that show why Shiro’s has earned its reputation as the home of saimin. Joe’s Saimin Delight, in particular, felt like a full meal in a bowl, with the roast duck adding a rich, savory depth.
What makes Shiro’s special is more than just the food—it’s the legacy. Founded in 1969 by Franz “Mistah Saimin” Matsuo, this place helped elevate saimin from a simple snack into a complete, thoughtfully crafted meal. That history and heart are still very much alive here.
If you’re looking for comforting local food, genuine service, and an old-school Hawaiʻi vibe that hasn’t been polished away, Shiro’s is a must-visit. It’s easy to see why it remains a beloved local institution after all these years.
Im not really into saimin, but this place is delicious. The flavor has always been too mild for me, but shiros knows the right balance. The noodles are perfect, too. I like the “hot and spicy”, but trust me, its not hot. Just a little more flavor.
As far as the burger goes, its more of a diner style burger, so a no frills ketchup, mayo, iceberg lettuce, and thicker than average meat patty. I think the buns are steamed. (I got mine to-go and ate it an hour later) very delicious.
Ive eaten there a million times, but its been years since ive been there last. Still the same nice aunties working. I love being called something endearing by a stranger. It makes me remember nicer times.
Anyway, visitor or local, know that this place has always been there and probably always will be.
Its nothing fancy, but youll get full and happy for 20$. Thats better than any other place I can think of.
The people here are so nice and the saimin is so delicious! We had to return twice to savor it. There’s 64 different choices for saimin including Hawaiian and diner dishes- we also tried lau lau, moco loco, poi, and burgers. These were all ok but the saimin was the star of the show. My favorites were the dry saimin (noodles had excellent texture and flavor with dipping dashi broth – pictured clockwise from steel bowl) and nabeyaki saimin (steel bowl) with lots of veggies, wonton (wontons are good here), fish cake, luncheon meat, poached egg, and chicken). We also tried the medium old fashioned (pictured 12 o clock) and Japanese saimin which were great too. I didn’t try the bento A (pictured) or moco loco but heard it was good. Prices were also amazing!

ATMOSPHERE:
Located in the Waimalu SC strip mall, Shiro’s is a clean, no-frills spot with a good amount of indoor seats. The rear dining room offered views of the kitchen.

Extremely lengthy menu of saimin, breakfast, sandwiches, burgers and plate lunches. No alcohol.
FOOD:
#4 Wun Tun Min with Garnishes
I chose the regular size which was a generous portion and medium-cooked noodles that were textured just past al dente. Presented searing hot (thank you), the broth was clean, light and just needed a dash more salt. The wun tun were plentiful and nicely-stuffed, but the wrappers were overcooked and borderline mushy, the dish’s only downfall. Garnishes included sliced packaged ham, won bok,char siu, green onions and sliced scrambled egg. Recommended.
The spouse enjoyed the #12 Combination Saimin and Udon with Vegetables and Garnishes which came only as a large size judging by the bowl and a Ham with Egg Sandwich (though with some wilted lettuce).
SERVICE:
Greeting was fairly quick but came from the back of the restaurant, not at the posted sign.
No greeting from the male server, just pen & pad in hand, though he was friendly. Two female staff members checked on us.
Food came out quick and served hot.
OVERALL:
A local-style diner with an emphasis on saimin.
