We’re locally owned and rooted in Pueblo & Pueblo West Colorado, serving up Greek-American fusion that hits different—gyros, falafel, house-made shawarma, and juicy smash burgers. Every bite is fresh, flavor-packed, and affordable.
Keep it authentic with the Classic Gyro. Or go bold with one-of-a-kind creations like the Spicy Yum Yum Gyro, the Mongolian Gyro, or the Green Chili Gyro—made with legendary Pueblo chiles for a hometown kick.
Pueblo pride on every plate—flavor, community, and fair-time treats like funnel cakes, fried pickles, and churros.
Not your father’s Greek food. But bring him—he’ll love it.

Trust me, you need to check this place out. We were genuinely blown away by how packed with flavor everything was.
I went with the rice platter topped with gyro meat, and wow… it was delicious. The meat was insanely tender and full of rich, savory spices, all piled on top of perfectly seasoned yellow rice that seriously stole the show.
My husband got the MacDaddy gyro and couldn’t stop talking about it. It’s basically a gyro-meets-burger mashup in the best possible way and was full of bold flavor.
You can skip the fries, they didn’t do much for us. But the tots and other sides looked tempting, and honestly, I’d be happy with just a giant bowl of that rice.
Overall: 10/10, absolutely recommend. Your taste buds will thank you.

I’ve wanted to try this place for a long time. Today I got the green chili gyro sandwich and it was delicious! I want to try everything on the menu! Too bad I don’t live in Pueblo. But I will go there for lunch when I can. The young lady who took my order was personable and helpful. Very impressed!!

So cool with so many choices! Fast and clean. Parking is ok. The bread and meat were fantastic. Bread so soft and fluffy. If you’re by here, I would definitely suggest stopping in. It’s not too far off the freeway to give it a go. Even if you want to eat inside very clean plenty of seating.

The vibe and service at Shaw’s American Gyro were on point — friendly staff and great energy. The food? Just okay this time, but still worth the stop if you’re in the area.

The Classic Gryo Salad and Rice were perfect! The Baklava has a good flavor, but was a little dry. Super cute place and friendly staff!

I have been wanting to try Shahs, since it was a food truck and AFTER two brick and mortars, I was able to finally enjoy the delicious classic gyro, a side of rice, spanikopita, and baklava. Nothing disappointed. I had more than enough with the gyro, but had to get the others, because why not? Leftovers were just as good and that tatiziki sauce, I could drink it. I needed more on my gyro, we ordered extra of that.

I stopped by after leaving therapy. I took one step out of the therapists office and went back in to ask what I was smelling and she directed me here. I would call this a Gyro-fusion style restaurant. I didn’t fully know what a Gyro was when I walked in, but I knew I didn’t like taztziki. The menu was fairly clear about what was in each item, allowing me to steer clear of my undesired condiment. I didn’t know what some of the words were, but the cashier (who was very friendly and personable ) helped fill in some gaps for me. He didn’t judge me when I showed my dis-taste at ordering a meal made primarily with chickpeas (they have a vegetarian menu) and instead steered me to what I would like. I let him choose between two entrees to surprise me and I was very pleased with the Mongolian Gyro.
For Gyro, fries, baklava, and a small tip I paid around $17-$18.
I would note that this is not “car food” as I learned. Either eat it in the restaurant or wait til you get home because these things can be drippy. I ended up transferring to a paper plate.

The gal who answered the phone was nice however the rest of my experience was horrible. I asked for special request and was told it could happen. Instead what I got for $18 was fries, can of pop, 5 spicy falafels I couldn’t eat, 5 THIN sliced tomatoes, maybe 7 slices of cucumber, chickpeas, a few olives, small feta cheese cup and no Greek dressing but Italian instead. DO NOT RECOMMEND! Go to Zorbas instead!

Mongolian gyro was delicious and the meat was perfect and tender . The classic gyro was delicious as well. Both gyros had good portions. Excellent food, I highly recommend this restaurant.
