After helping run the original Schulze’s Bar-B-Que, in Rosenberg, the second-generation restaurateurs opened Schulze’s Pit Room.

Huge parking lot and plenty of both inside and outside seating options. There’s a bar with seating as well. Bathrooms were incredibly clean. Both the pulled pork and brisket were delicious. The sauce is a great complement to the meat. The green beans were the best green beans I’ve ever had at a restaurant – not soggy! The cashier was friendly and helpful in explaining the menu. The macaroni was really good as well. Went for a late lunch on a Wednesday and it was fairly quiet. It was pricy like most BBQ restaurants but totally worth the price.

The stop this trip that I’ve been the most excited for is Schulze’s Pitroom all because of the sausages they are slinging. Pushing the boundaries of sausage boldly going where I one has gone before. I purposely didn’t look at their social media for the last month because I wanted to be surprised by the sausage special. I roll in today to see the butcher paper “In-N-Out Double Double animal style sausage”. . . I take a bite and no joke the PA system starts playing “Times Like These”-Foo Fighters and I’m chomping at this sausage hearing these lyrics. Listening to a song and eating a sausage that hits the nostalgia of my formative years growing up in San Diego. The pieces of burger patties, pickles, bun, onions and fries were all one singular unit but you could taste and feel each as you bite. All bound together with the sausage spices. The fries! As I was biting it was giving California Burrito as well maybe because of the form and it being filled out with fatty beef. I’ve had two “religious experiences” with sausage in my life and both have been in Seguin, Tx. Rewording the lyrics, “It’s bites like these you learn to live/love again”

Oh also the brisket was fantastic. Nice and peppery and the fat cap melted wonderfully in my mouth. The ribs with the glaze! Such a fatty rib. Slightly sweet with a chili flavor that reminded me more of Gochugaru and Korean chili peppers more than what you find in regular chili in the west.

But man. That sausage. I keep talking to ppl and I feel that sausage is the meat item where you get feel the soul and creativity of the pit master the most boldly stated. I need to come again when I’m in the area for the next soul shaking sausage they have on rotation.

Schulzes Pit Room is 10 stars. Brisket was moist and has the perfect bark. Ribs were out of this world tender and delicious. Half chicken was delicious and moist. Jalapeno sausage was oozing with cheese. The potato salad was probably the best over ever had. Sheri the owner sat down and talked with us for 30 minutes and showed us all around. We even got to meet the guys in charge of the smokers while they were hand trimming the brisket. You can see they use super high quality beef with insane marbleization.

I will always come here from now on!!!

This place is the BEST bbq in Seguin!!! If you’re looking for real Texas BBQ, this is it! The brisket was tender, juicy, and packed with flavor in every bite. The chicken and turkey were perfectly smoked moist and seasoned just right! And the sausage… SO good with that perfect snap! You can tell they take pride in their meat because everything tasted fresh and full of that true BBQ richness! Definitely a spot we love getting our BBQ!

Food – moist brisket was juicy and season well. Nice bit of bark to it. Original sausage was OK. They were out of the jalapeno cheddar sausage when we went in which is what I really wanted. The tater tot casserole is a must! This was the best part of it all. Wife loved the potato as did I. Wish more BBQ places would do baked potatoes.

Service – usual BBQ restaurant setup where you order at the counter, but they cut and portion your food in the back and buzz you when your food is ready. I like to see the process and confirm weight of the food. Never know if they under-serve you.

Atmosphere – newer place and not like your usual BBQ joint that is a wood shack, with BBQ stained into the walls (though I love that). They did have a bar, but I was not drinking.

The brisket had a nice pepper bark and fell off my fork it was so tender. The ribs had a little sweetness (maybe brown sugar?) that was amazing and fall off the bone soft. Sausage had snap and a good texture, definitely good.
Sides were as expected. I didn’t like the mac and cheese it had some spice in it that didn’t work for me. The potato bake was awesome. The bathroom was clean and actually had appropriate access for a wheelchair user.

Not our first time there, but the first time dissapointed. Ordered the specials and the pastrami could’ve used a little more sauerkraut, but realy been bummed with the pork belly. Flavor was good, but lacked the crispy crust and was very dissapointed with the portion….2 pieces of pork belly over 3/4 cup of sticky rice ….thats it? Oh – 3 slices of bread with that yeah- we dont order that one again

First time in today and let me tell you I wasn’t at all disappointed..I had the brisket sandwich and baked potatoes salad and let me say that the brisket was one of the best if not the best I’ve ever had. Service was fast and super friendly..kudos to Susan she is perfect employee that is smiling and recommending items..She made lunch for me a cheerful one as I was having a bad morning..However I left with a smile on my face.Great overall,and definitely recommend..

Food: Food was just ok. The 1/4 lb of brisket I ordered didn’t seem like it! It was dry, old and expensive!! I believe they are over priced.

Service: the older short cashier lady has no patience and she’s rude. That afternoon we were there was a cold day. The table next to us had a newborn baby, well the older cashier lady decided to open the garage door, so it got very cool in the main dining area. Why did she do that? If we were freezing, I know the baby was as well.

Atmosphere: your typical modern rustic dining area, plenty of room, a table with jalapeños, onions, pickles, etc…, and a small bar that seems it’s always closed.

This place was awesome when they first open, I think it has gone down hill. I don’t recommend it.

I’m not saying the food isn’t good. It is good. However, let’s discuss portion control. I got a baked potato with turkey meat on it and I seriously don’t even think there is 4 ounces of turkey here.
For the cost of this item, I believe that there should be more meat. I paid almost $20 for this and a large .
Just my opinion.
