This place is a gem! I am so excited to have a hot pot spot in our neighborhood! My partner and I went in the week before we had our son and it was a perfect night! The food was so wonderful – the broths were so rich and flavorful and all the ingredients are super fresh! Also, the staff is so kind! Highly recommend !

Such a yummy lunch from a sweet family-run business! I loved my bún bò Huế that reminds me of my family’s version, and my husband loved his bún thịt nướng chả giò (vermicelli with grilled pork and egg roll). This place is AMAZING!! The service is amazing, authentic tasty food. It is not cheap, but it is QUALITY. Out of all the Pho shops in the entire Olympia/Lacey area this has the best Price with Quality with large portions I’ve had in awhile. I will be recommending and will be returning for sure. I can’t say enough good things about Saigon Fusion 8. From the moment you walk in, you can tell it’s a family-run business that truly cares. The atmosphere is so warm and welcoming, making it the perfect spot for a family meal.
The food was the absolute highlight. I had the chicken stir fry, and it was excellent—perfectly seasoned and fresh. My wife ordered the beef rib soup, and the Angus beef ribs were cooked perfectly: tender, flavorful, and falling off the bone.
The entire restaurant was immaculately clean, and the staff was incredibly happy and courteous throughout our visit. If you’re in Olympia, this is a must-stop for authentic Vietnamese comfort food!

A great Hội An inspired Vietnamese restaurant! A real treat to have bánh xèo and bún riêu! The herbs are fantasticly fresh and the flavors very rich. The wait staff appear to be a father and son duo who are very nice. We left feeling healthful and satisfied.

I’m so glad this place exists, it’s worth a try, but the pho is too sweet for me. I’m sure it’s someone else’s preference. The hot pot is interesting, I think the one at their other location is better because it has some self-serve components. It was fun to try ingredients I have never come across before and I’ve tried a lot of hotpot. They need to add the hotpot menu to their website, it’s on their Facebook page though. I didn’t like that you could only order 5 ingredients for the table rather then per person because my husband and I have very different tastes and were eating 3 ingredients at a time each. I’ll come back if that changes.
