Lo que quisimos crear con Rugantino fue un restaurante donde se pudiera degustar la gastronomía italiana en todas sus versiones tanto CLÁSICAS como (la autentica carbonara romana con guanciale, su queso parmigiano reggiano y pecorino, cocinada a 65 grados para su perfecta elaboración), VANGUARDISTAS (diferentes pastas frescas rellenas de todo lo que se puede imaginar) y día a día a lo largo de estos 20 años creemos haberlo conseguido y nos han servido para mejorar y dar la mejor versión de nosotros mismos tanto gastronómica como personal, sin cesar en ningún momento por nuestro afán de superación.
