High-quality ingredients and truly authentic flavor. You can tell there’s a lot of love and skill behind every sandwich. The owner even goes all the way to Philadelphia just to get his bread — that dedication says everything about the care he puts into his food.
The sandwich was huge and full of flavor, the fries were crispy and perfectly seasoned, and the hushpuppies were fantastic. On top of that, the owner is a fantastic guy — friendly, passionate, and clearly takes pride in what he does.
Easily one of the best spots in Syracuse if you want an authentic cheesesteak made with real care and quality.

FOR STARTERS, GO TO RUBY’S FACEBOOK PAGE FOR UP TO DATE HOURS AND WHAT THEY’RE OFFERING. GOOGLE IS NOT ACCURATE. THEY’RE STILL RUNNING ON A LIMITED SCHEDULE FOR TRAINING AND QUALITY PURPOSES. THE OWNER CARES DEEPLY ABOUT QUALITY AND CONSISTENCY.
Wow, so I must say that after spending 5 months in and around Philly this past year this Cheesesteak is better than most spots in that area and is up there with the greats (Angelo’s South Philly, Del Rossi’s, Uncle Gus’Steaks, Gazzo’s). Absolutely phenomenonal!
The Ribeye Steak is great quality, it’s cooked and seasoned just the way it ought to be. The Onions are bigger than most spots but they tasted awesome and were cooked perfectly. The Cooper Sharp American Cheese really ties it all together, the ratios are on point! I usually like a more well done roll with a lot of seeds like Corropolese Bakery but I had zero complaints about the Sarcone’s Roll, I actually really enjoyed it. The Fries were cooked to perfection and salted properly.
Please everyone be patient and let them get everything in place properly. When they open up Full Time I think the place is still going to be super busy!
The building is really comfortable, the food is bomb, and the customer service is phenomenonal! I drove from Potsdam, NY which is close to 2 hours and 45 minutes or 150 mile drive and I will absolutely be back!

Saw this joint from a foodie review on Tic Toc – my algorithm is spot on. The place was busy and I was a bit concerned that most were waiting and did not have thier food. But, it was only a short wait and as you can see it was solid.
The true test was my buddy from Philly – a cheesesteak aficionado. The menu is simple – 3 items that day! Cheesesteak and fries.
We ate half our subs as they were huge. Super cheesy with tender beef and onions, man they were good. Fries were crisp and seasoned right. Philly guy review – as good as they come!!
Went out and had a few that night – made a great late night snack!!
*they only have ketchup, no mayo. Odd!!!

They definitely give you your money’s worth in steak, I was full with just a half. Steak & onions were tender and seasoned perfectly, and the cheese is the icing on the cake. Only knock is the bread, maybe it was the 10 min drive back, but it didn’t hold up well. Will definitely be back.

best cheesesteak I’ve ever had, and I lived in Philly for a while. perfect blend of onions, cooper sharp and thick sliced rib-eye steak. It’s filled to the brim and a mouthful of flavor in every bite. The tallow Fries were also cooked to perfection with a nice layering of salt. The owner really goes above and beyond for every sandwich. I just hope it’s sustainable and he can expand his hours to accommodate longer hours as he sells out daily.

I’ve had cheesesteaks all over CNY and most have been decent with some being excellent. Ruby’s takes the cake for me in terms of best cheesesteak I’ve had in CNY. I’m not an expert on Philly cheesesteaks from Philly but I wouldn’t be surprised if this was on par with the best cheesesteak places in Philly. I saw tallow fries on the menu and had to order those since you don’t see those at many places around here, and those were crispy and tasty as well.

If you’re looking for the closest to a Philly cheesesteak in Syracuse this is the spot. This sandwich is huge and worth the $20. They also offer fries for $22 with the sandwich. They occasionally offer Carolina pork sandwiches (haven’t tried yet) but have heard great things. Best way to get up to date information on specials is to check out their Facebook page.

Your going to wait a long time for your food. I just ordered a sub and was there about 20 mins waiting maybe more. The sandwich is delicious they definitely use a great quality steak. Sandwich alone is $20.00 bucks so if your looking for a cheap meal this is not the place. I would have at least Appreciated a drink with the sandwich or options but still good sandwich overall. Customer service was great but you will be there a while and can’t order ahead.

Ruby’s serves real Philly flavor in Syracuse. The Shaved Philly Classic with Cooper cheese and caramelized onions is next level, and the Eastern Carolina pulled pork sandwich brings tangy BBQ heat. Crispy fries seal the deal every time.
