This was real good bbq. the standouts were the brisket and chili grits but the sausage was excellent. Deserving of TM Top50. Stopped here on a road trip, will definitely check to see if they’re open next time through.

TL;DR: Rossler’s Blue Cord Barbecue is a Wednesday-Thursday slice of smoked heaven. Brisket divine, ribs on point, raspberry pork belly burnt ends worth a medal of honor. Elote pasta salad so good my side dish queen requested a royal encore. Spiced banana pudding earned a standing ovation at home. Stamp number 12 secured with flair and a shirt stamp bonus.

The Texas Monthly passport had been burning a hole in my glove box, whispering “Number 12 is calling.” So I marched down to Rossler’s Blue Cord Barbecue, a proud member of the Top 50 list and clearly not afraid to open shop mid-week while the rest of the BBQ world hits snooze until the weekend. Noon sharp. No line yet, but like the smell of smoke, it drifted in fast.

The trailer gleamed under the Texas sun, practically hollering my name. Live music playing. Tables set. This was the kind of lunchtime battlefield I was born for. I called in a tactical strike: brisket, ribs, and those famed raspberry pork belly burnt ends. Steven, the pitmaster himself, must’ve sensed my dedication to the cause. He tossed in sausage on the house. That’s Texas hospitality, battlefield general style.

The brisket was rich and juicy with a smoke ring that could win a beauty pageant. The ribs were perfect, holding just enough bite to remind you they came from a real pit, not a shortcut. But those burnt ends? Sweet, savory, caramelized treasures that had me questioning whether dessert was even necessary. The elote pasta salad earned high praise from the side dish queen herself, who normally gives elote a royal thumbs down. She declared it “worthy of the crown,” which in our house is the ultimate accolade.

Before leaving, I grabbed a spiced banana pudding for my queen. She later reported it was “heaven in a cup,” which means next time I better bring home two.

Steven sealed my visit with not just a passport stamp but a shirt stamp too. That’s how legends are made.

Stamp 12 down, 38 more to go before the big prize. If Rossler’s wasn’t an hour away, I’d make Thursday BBQ runs a standing weekly appointment.

2/26/26- They were running a beef rib special at $28/rib. I managed to grab the last two and had also ordered 1 lb brisket. I tipped 15% and let me tell you how disappointed I was that after paying $125, and about $150 a few weeks prior, I don’t think I’ll be returning. All brisket and beef ribs were WAYYYY too smothered with black peppercorns to the point I was wiping them off the beef ribs. The size of the ribs, particularly 1 of the 2, was ridiculously portioned to hardly any meat and just plain fat and the bone. Couldn’t even make a sandwich out of it unless you want all fat and a pinch of beef. I was also surprised that I was only given a very small tbsp or so of chopped onions and a few pickles with the 1 lb of brisket. And only 2 pieces of bread. The time before I was given about 6 pieces of bread for the same amount. I hate to say it but this isn’t the type of price you wanna gamble paying with inconsistent flavor/quality. I rather make the drive to Terry Black’s in Waco and pay premium price for premium beef ribs. Not to be ripped off. That’s how it feels.

My friend Bob, and I drove down from DFW today. He and I have had samples of their food at festivals before but wanted to experience their full menu, during a normal service. Everything was fantastic. Meats, sides, and the spiced banana pudding were all out of this world. Owners are super nice, and friendly as well. We have travelled all over the state to eat barbecue, and Rossler’s is great destination for any Texas BBQ lover. Highly recommend.

I constantly google BBQ near me and I never saw Rossler’s Blue Cord BBQ until one day they popped up in my search results. Which was such a coincidence because I live near where they park in Harker Heights and I never realized I was driving by a bbq truck, let alone a great one! Not even a great bbq truck, it’s just great bbq in general, better than most restaurants!

I have been to 5 of the top 10 bbq places in Texas and I’d put Rosslers #3 In my personal rankings of best bbq I’ve ever had and by far the best bbq I’ve had in the Killeen/ Waco area. What a coincidence that just a few weeks later they’d make it to the Texas top 25 list! All of their food is delicious and they earned it, not alot of places can get bbq and their sides right, but they sure do. I love the brisket, it’s amazing (I’ll mop your truck with a toothbrush for the rub recipe) the Ribs are classic Texas but I loved how they sprayed lines of bbq sauce on them, for flavor and presentation. Every side we had was phenomenal and I truly enjoyed my visit. I will return every time I can. And I will and already have recommended this place to alot of friends and family. Absolutely great people, and better food 10/10

Got the cold smoked picanha and was blown away. I rate a true bbq spot by their sides and y’all….Mac n cheese, best I’ve ever had, elote pasta salad, LFG, collard greens, incredible. But the star of the show, the homemade Blantons cheesecake on special. Too 50 bbq? More like top 5. Thank you!!!

The best barbecue in Texas! Everything is amazing! All made fresh and served with pride and love! These guys are awesome and the food is absolutely amazing! The brisket is the best I have ever had! Been following Rosslers since I was active duty 7 years ago, and finally had the honor of meeting him and trying his food. Everything was absolutely incredible and full of flavor. Brisket was mouth watering, The Swancho Taco was an explosion of flavors, the jalapeño sausage was perfect, the Mac and cheese and Cole slaw were excellently done, and the banana pudding was delightful.

I would highly recommend supporting Rosslers Blue Cord BBQ and being on the lookout for when he is open. Top contender for best BBQ I’ve ever had!
